I just dont see what your ear has to do with not making plans!

"Playing by ear" means that you can recall a tune simply by hearing it (with your ears) and then play it on the given instrument. Playing by ear is a common phrase when refering to playing a popular instrument, like the piano. It's been adapted over the last 20 years to mean that towards anything. Planning something takes time and effort, but if you "play it by ear" your going on what suggestions you hear.

It comes from music.

In music you can read the notes of the sheet or you can listen to the sounds from an instrument and play the music by "ear". A musician can tell what note is being played by simply listening to it.

The expression later just carried over into the mainstream.
