i didnt find the recipe online, its pretty easy..
ingredients: chicken, taco seasoning, shredded cheese [mexican blend], large tortillas, green peppers, onions.
serve with: sour cream, salsa, rice
instructions:
cook the chicken with a cup of water and the taco seasoning in a large sauce pan. cut the chicken, you can basically make it whatever size/shape you want. now do the same with the peppers and onions. put a little butter on the saucepan. put some chopped onion and pepper on the butter to cook it a little. then put it to the side. now put a tortilla on the saucepan. cover half of it with cheese. then put pepper onion and chicken on it. now fold it and cook it until both sides are lightly browned. you can add oil or butter to help it cook.
salsa, sour cream, and rice should be self explanatory.
um i think there spanish? or mexican.
mexican food is more spicy than spanish food.
and i think theyre amazing. theyre deffinitely my favorite food.

Creamy Chicken Enchiladas
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1 tablespoon margarine
1 onion, chopped
1 teaspoon chili powder
2 cups chopped cooked chicken breast
1 (4 ounce) can chopped green chile peppers, drained
8 (8 inch) flour tortillas
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl mix the soup and sour cream; set aside.
Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken, chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.
Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.
Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.
I make it alot. It's Yummy!

Yes I have made it many times.
Yes its typical - hence the name. Many families and locations have their own variants on the recipie but typically its lamb or beef with vegetables and potatoes...
If you fancy something richer, try Beef Ragu (again look on BBC for recipie)

Tofu burgers...
Tofu and Oatmeal (one block of tofu and about 3 cups of oatmeal in a food processer) with some garlic and hotsauce...fry them up (don't forget the egg to stick it all together)...serve with Almond-aise and eat like a maniac! There is not another tofu dish I like more!
Make it all the time and love it so much!

1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)
Salt and pepper
1/2 cup Italian bread crumbs
1 egg
2 cloves garlic, minced
1/4 small white onion, grated
2 tablespoons golden or dark raisins, chopped
3 tablespoons pine nuts, chopped
3 tablespoons grated cheese, Parmigiano or Romano
2 tablespoons chopped flat-leaf parsley
1 cup arugula leaves or baby spinach
6 slices prosciutto di Parma
6 slices deli sliced provolone
Extra-virgin olive oil, for drizzling
1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni
1 pound broccolini, trimmed into florets
2 tablespoons butter
1 cup ricotta cheese
2 teaspoons lemon zest
2 tablespoons chopped fresh thyme leaves
12 grape or small vine tomatoes, halved
Preheat oven to 450 degrees F.
Put water on to boil for your pasta.
Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.
Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.
Salt water and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.
While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.
To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

It turned out very well. I have made it several times for family and company. Some liked it so well they requested it again or asked for the recipe.
