I have 3 sweet potatoes and I wanted to know how to make a pan of yams from those 3 sweet potatoes. How long do I boil potatoes, do I peel them first etc?

A sweet potato and yams are two different types of tubers. Are you looking for a candied sweet potato recipe?
Ok here's a great recipe:
4 large sweet potatoes
3 cups water
1 1/2 cups brown sugar
4 tablespoons butter
1 (3 to 4-inch) cinnamon stick
1/4 teaspoon freshly grated nutmeg
1/3 cup bourbon (recommended: No. 7 Jack Daniels)
1 long strip orange peel

Preheat oven to 400 degrees F.
Wash and dry sweet potatoes and bake for 1 hour or until potatoes are soft to the touch. Remove from the oven and let cool slightly then remove skin from potatoes. Reduce oven temperature to 350 degrees F. While the potatoes are baking, combine remaining ingredients in a saucepan. Bring to a boil, then reduce the heat and simmer for 30 to 45 minutes until sauce is slightly thickened. Slice the potatoes 1/2-inch thick into a medium casserole dish. Pour syrup over them and return to the oven and bake for approximately 30 minutes

That's like asking how you make an orange from a tangerine. You can't make yams from a sweet potato, but you can use sweet potatoes the same way you would use yams in a recipe.

yams and sweet potatoes are different things
people do use the words interchangeably but they are different
it does get confusing

I bake them in the oven (350F) for 2-3 hours and then slice - the long cooking time caramelizes the sugars and makes them extra sweet, the skin comes off easily (they will look shrivelled and funny)

You can also make soup:
CURRIED PUMPKIN AND SWEET POTATO SOUP
1 ½ tsp veg oil
1 tsp garlic
1 cup chopped onion
2 ½ cups stock
8oz (250g) peeled and chopped sweet potatoes
1 cup canned pumpkin
1 ½ tsp curry powder
½ tsp coriander
1 tsp honey
½ tsp ginger
¾ cup (175mL) 2% milk
In nonstick saucepan, heat oil; sauté garlic and onion until softened, approximately 5 minutes.
Add stock. Sweet potatoes, pumpkin, curry, coriander, honey and ginger; reduce heat, cover and simmer until potatoes are tender, approximately 40 minutes.
Puree until smooth. Return to saucepan stir in milk until blended.

Yams are gigantic. They grow in Africa, and believe me... they are YUCK! To acquire these, you'll have to go to a specialty store, like one that specializes in African foods. And you'll need to cook them forever. Plus, they are not very sweet. What we call "Yams" in this country, are actually "Carolina Yams" which is another word for, yep you guessed it, sweet potatos. So if you buy "candied yams" in a jar, they're actually just sweet potatoes. In the South, people often call sweet potatos "yams." But real yams are impossible to find down there.

Making yam is easy sweetie, it's when you have to make that damned marmalade that it gets tough!

Yams and sweet potatoes are unrelated vegetables, though in both cases you're eating the root of a tropical vine. Sweet potatoes, Ipomoea batatas ("batata" is the original Taino name, whence potato), are an American plant of the morning glory family, whereas yams are of the genus Dioscorea.

Grocery stores in the US typically label sweet potatoes as yams or candied yams. It is a misnomer.

If you wish to make candied sweet potatoes, here are a few good recipes:

2 pounds sweet potatoes
3 (2-inch) strips orange zest, white, spongy pith removed
2 cinnamon sticks, broken in half
1/2 cup freshly squeezed orange juice
1/3 cup pure maple syrup
2 tablespoons pure olive oil, light sesame oil, or unsalted butter
1 tablespoon freshly squeezed lemon juice
2 teaspoons peeled and finely chopped ginger root
1/2 teaspoon coarse sea salt


Preheat the oven to 375°F.
Peel and halve the sweet potatoes crosswise. Cut each half lengthwise into 4 wedges.

Place the sweet potatoes in a baking dish that will hold them in a snug single layer.

Tuck the orange zest and cinnamon sticks among the sweet potatoes .

In a bowl, whisk together the orange juice, maple syrup, oil, lemon juice, ginger, and salt. (Note: if you're using butter, omit it in this step, but dot the assembled casserole with small pieces of it before it goes into the oven.) Pour the mixture over the sweet potatoes .

Bake for 1 1/4 hours, basting every 15 minutes, until the sweet potatoes are tender and glazed and the pan juices are syrupy.

Remove the orange zest and cinnamon sticks before serving.

12 large sweet potatoes
3/4 cup (11/2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup toasted pecan pieces
1 cup miniature marshmallows

Preheat the oven to 400 degrees F.
Wash the sweet potatoes, scrubbing them well to remove any dirt. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 45 minutes, or until a knife inserted in the center goes in easily.

In a large bowl, mix the butter, brown sugar, and flour together until it's crumbly-looking. Add the cinnamon, salt, pecans, and marshmallows; fold the streusel topping together to combine.

Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the streusel topping and return to the oven. Bake for another 20 minutes, or until the topping is bubbly and brown.

5 tablespoons unsalted butter
3 pounds sweet potatoes
Kosher salt
1/2 cup chopped pecans
1/2 cup coffee flavored liqueur (recommended: Kahlua)
1 cup heavy cream
3/4 cup dark brown sugar
1 (10.5 ounce) bag mini marshmallows

Heat the oven to 350 degrees F. Use 1 tablespoon of the butter to grease a 2 quart oven-proof baking dish.
Peel the sweet potatoes and slice them 1/8-inch thick. Place 1/3 of the potatoes in the bottom of the baking dish. Season with salt and sprinkle over 1/3 of the pecans. Repeat 2 more times. Pour the coffee liqueur and cream over the potatoes. Spread the brown sugar evenly over the top and dot with the remaining butter. Cover the dish with aluminum foil and bake until the sweet potatoes are tender when poked with a sharp knife, about 50 to 60 minutes. Remove the dish from the oven and turn on the broiler. Remove the foil and cover the sweet potatoes evenly with the marshmallows. Put the dish under the broiler until the marshmallows are lightly browned, about 1 minute. Let cool a bit before serving.

You can't make yams from sweet potatoes, they are 2 different vegetables. You can however interchange them and use them the same way you would the other.

Same thing - only different, peel them,, wash under cold water- cut in quarters, cover with cold water in pot,(size depends on how many potato's you have) boil till you can poke them with a knife or fork and they are soft, drain water, mash with butter . yum
