When I did that, I relied very heavily on homemade marinades. You can marinate almost anything in garlic, lemon and vinegar, then grill it, and have it with a green salad (maybe with a little crumbled blue cheese on the green salad, yum).
Find a recipe for chicken tandoori -- that's a marinade made with spices and yogurt. Grill that, and again, serve it with a salad.
You can find lots of good recipes for marinated flank steak -- generally the marinade involves some combination of red wine vinegar, Worcestershire sauce, soy sauce and I don't know what else, a tad bit of grainy mustard and some chopped fresh dill -- and grill that.
If you have leftover steak, find a recipe for jhal firezi (jalfrezi), an Indian dish made with strips of sauteed beef and some onions and green peppers, and cook that. (No rice so you'll have to figure out what to eat it with, of course -- are you allowing yourself a low-carb tortilla to wrap this in?)
Find a recipe for "Thai beef salad" or "Thai squid salad" and do that. It's an excellent low-carb thing.
Any marinade recipe that calls for sugar, just substitute Splenda.
Go get a box of Zatarain's crab and shrimp boil, and boil up a batch of shrimp in the shell. Cool them on ice, peel them yourself and dip in ketchup-and-horseradish sauce.
There's a good recipe for "crustless quiche" in the Atkins diet book, which is a nice breakfast dish.

low carb is the most difficult for the first two weeks. progresso soup has a low carb soup with only like 8 net carbs for 1 whole cup. its called chicken cheese enchilada. it tastes great when everything else gets boring. also if you like almonds you can have like 1/4 cup a day which only has 3 carbs. it makes a great snack and if you eat some before a meal, you will usually eat less (so ive read)... also sunflower seeds (in the shell still) 1/4 cup of them is only 1 carb... great for watching movies or tv so you wont be tempted into eating popcorn. oh, and the greatest think on a lowcarb diet is Crystal Lite... i would die without it... (try the fruit punch, its awesome) hope this helped.

Ive done it and seen other people do it too and i will tell you one thing, you will gain as quick as you lose when you decide to stop,only you will gain more than what you were to start with. You end up craving for carbs after about a week. Just eat a sensible diet. Each day have 2 fruit, 5 veg, 150 g meat, 8 glasses water, 2 slices bread, glass skim milk. No chips or other junk food and you will be on your way! Good Luck.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

Grill up some chicken
Toss it on a bed of spinach, tob with crumbled gorganzola cheese & use raspberry vinegrate dressing (I add glazed walnuts and dried cranberries too)
