I think the best investment you could make is a 20 dollar rice cooker (wolfgang puck 7 cup at HSN.com) You can just chuck stuff in the pot, press a button and its done! I throw in raw pasta, cream, water, butter and cheese and in twenty minutes the mac n cheese is done! (We are vegetarian, but you could throw in some ham or vegies) You can also put the raw pasta in with spagetti sauce and its done in twenty too. It also has a steamer basket where you can steam fish or chicken while the pasta cooks (damn, wolfgang should pay me for advertising, lol I tell everyone about it hahaha

I use lots of boxed items like rice o roni, instant mashed potatoes for days i really have no time.
Frozen veggies in the microwave.
Cut up either chicken or meat and fry it up real quick with some seasoning like soysauce, or just salt and pepper.
You can also add onions, tomatos and peppers.

Invest in a crock pot. You can throw something together in 5 min before you leave for work, turn the crock pot on, then when you get home, dinner's ready.

Chili, roasts, soups, pasta sauce, pulled pork... basically anything you want can be cooked in a slow cooker - aka crock pot.

Depends what you have in the fridge but....
left over chicken makes a great mini pizza on a pita using Italian dressing, sliced peppers & cheese.....
you can do the same with tuna (tuna melts)...
cheese omelets & a salad....

my parents make me cook all the time... simple stuff would be stuff like sandwiches and mac and cheese, or like grilled cheeses and soup.. if ur kids aren't picky then it shouldn't be to hard it's just the whole tryin to figure out what to put together, ask ur kids, or just start experimenting
