I could direct you to many sites. www.bettycrocker.com is a great one. Recently I tried the mini-meat loaves, my family loved it.

Here's one I made just last night. It's easy, feeds a family, little clean up, and will make you look good. Oh yeah and it's healthy too.

Baked Chicken

You will need:
Reynold's Oven bags- large
1 whole chicken about 4 lbs.
Olive Oil
Mrs. Dash seasoning
4-6 Red Potatoes (or any kind of potato)
1 Onion
1 Bell Pepper - optional
Carrots - optional
Celery - optional
Peas - optional
Chicken Bouillon - optional
Flour - 1 tbsp
Baking pan (broiling pan or casserole dish works)

30 to 60 min. prep time
1 hour cook time

Preheat your oven at 350 degrees while you are prep cooking. Chop up your vegetables and set aside. Mix 2-3 tbsp Mrs. Dash, 1/2 olive oil, and bouillon in a small bowl. Put flour in Reynolds bag and shake around. Place bag in the pan then place chicken in the bag. Put vegetables in the bag around the chicken. Pour oil and seasoning mix on chicken and let the extra go on the vegetables. Close up the bag, tie it off, cut 6 slits in the top of the bag. Place the pan in the oven for approx. 60 minutes. Check after 45 minutes to see if chicken is golden brown. When cooking time has finished take pan out and let it cool (resting). After about 15 minutes open the bag and serve. Enjoy!

Buy the "Four ingredient cookbook". All the recipes only have 4 ingredients. I like Soy Sauce Chicken. Mix 1 cup sour cream with 1/4 cup soy sauce. Lay 4 chicken breasts in a baking pan and pour the sour cream mixture over the top of them. Bake them 425 degrees for 45 minutes or until the chicken isn't pink in the middle. I usually mix the sauce a little halfway through the cooking time too.

Can you follow the directions on a box of mac-and-cheese? Figure one box for 2-3 people. If so, add to that 1 or 2 cut-up hotdogs per person. Slice them fairly thin. Put them in the water with the macaroni when you're boiling it. Do everything else as directed on the box. When it's just ready to serve, sprinkle a good handful of grated cheese over it. For snacks or a light 'munchy' lunch, there's always "bumps on a log." It doesn't involve real cooking over heat, but it does give you knife practice. Wash a stalk or two of celery, and cut it into 6" lengths. (Don't slit it up the middle, though. You'll need the groove intact later.) Mix a little margarine into some peanut butter to lighten the texture. Spread this in the groove of the celery. Dot with raisins. This makes a good take-along lunch food if you put two pieces together (pb sides facing) and wrap with plastic wrap or aluminum foil. Take the raisins along in a separate packet and put them on when you're ready to eat.

I made a dinner the other night that was really good and easy. You need a few chicken breasts depending on how many people you are serving. You just put them in a big ziploc bag with a bunch of minced garlic, olive oil, and some lemon juice. I also made some cous cous or mashed potatoes and some broccoli and garlic bread. Oh, and you just cook the chicken on a pan until it's done.

I like making chili - virtually impossible to mess-up, and you only need one skillet and one spoon. Good served over rice or a baked potato, too. Great leftovers.

I just get the McCormick seasoning packet, and follow the instructions:

1 pound lean ground beef
1 package McCormick® Chili Seasoning
1 can (15 ounces) kidney beans, drained
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce

Directions
1. Cook and stir ground beef and onion in large skillet on medium-high heat 5 minutes. Drain fat.
2. Stir in Seasoning Mix and remaining ingredients. Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.

With the beef, after it is done add the olives & mushrooms. Heat the broccoli up in a microwave or on the stove. Mix in with the beef and toss with the noodles. Add the seasoning packets and toss good.
