We're having a small dinner party where everyone is supposed to bring a side dish for lasagna. We have salad & garlic bread but what other side dishes would go with it? Or even appetizers maybe. Thanks

You could do bruschetta for appetizers. Antipasto is kind of like salad but would make a good appetizer. Some kind of soup like Italian wedding soup would be another good thing to have before the lasagna. I don't think lasagna usually has side dishes. It is the main course with other courses like appetizers coming before it and dessert coming after it.

You'll definately need a contrast to that smooth, rich lasagna : P~~~

I would do a stuffed portobello cap for an appetizer, a small salad with some blanched broccoli and cauliflower in a balsamic vinagrette, and the lasagna will definately take care of the party after that.

CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1 ½ cups Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


Tomato-Mozarella Bites
20 grape or cherry tomatoes, halved
20 fresh basil leaves
20 small balls fresh mozzarella cheese (often labeled bocconcini)
salt and pepper to taste
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
20 toothpicks

Using a toothpick, spear a half of a tomato, a piece of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients. Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.

You could serve an Antipasti`, or Brucshetta. Lasagna is pretty much a meal by itself, but your idea of bead and salad are also good. Try this:

Get some fresh aspargus, lay it on a cookie sheet, on foil. Make sure to cut off the ends that are not edible. Once ont he cookie sheet pre heat oven to 350 degrees. Sprinkle the asparagus with the following: Salt, pepper, sugar, olive oil, and paprika. Bake them for 15-20 minutes, and OH MY GOD THEY ARE GOOD......Aunts recipe, perfect for italian dishes

i always make a dinner salad, and fresh baked bread or the garlic bread sticks you can buy in the freezer section at the grocery store. stuffed jalapeno peppers go well too or deep fried mushrooms. and a pie or cheesecake for dessert.

Fried peppers and onions.

Slice up some orange, red, and yellow sweet (bell) peppers, and or some Italian peppers, along with some onion.

Sautee in a light olive oil on medium-high heat. Stir occasionally, cooking for about 10 minutes. I like them to still be a little crisp/firm, some people like them all cooked down and carmelized.


(hey, everyone has a right to their own opinion, but someone mentioned mashed potatoes - that's just crazy talk) :-)

The salad and the bread is just enough.

Maybe a soup just before the main entree, a creamy one, like onion, mushroom, or pumpkin.

Good appetizers could be stuffed mushrooms, stuffed olives, a pesto with small pieces of toasted bread.

Hard bread sticks and prosciutto. Just take a small piece of prosciutto and wrap it around the crunchy bread stick - I usually spiral mine down.

You can do the same with some asparagus that's been blanched.

OR, you can buy some figs, cut them in 1/2 or 1/4, and put a little 'nest' of prosciutto on them. Great combination of sweet and salty.

All of those dishes are very heavy..so go with something light. If you want an appetizer that is light but goes well with Italian..i suggest a Philly cheese cracker topped with pepper jelly...or a Philly cheese mixed with chopped cucumber. You need something cool and refreshing to off set the heaviness. Also..another idea..one that i serve with Italian dishes often is steamed artichokes...or something to do with artichoke hearts.

I would just have the bread and a nice salad. maybe before hand some appetizers. chhese sticks etc.
