Gosh, there are so many resorts. Find a good travel site online and see what they have to offer. Here is a list of top travel and destination wedding sites: http://www.topweddingsites.com/honeymoon-and-travel.html
and a destination wedding timeline with a list of more top destination wedding sites:

Talk to the travel agents. They have a lot of experience with all of the best resorts and destinations.

If you have people coming with you that may not be coupled up Sandals will not let them in. Try Riu... Its a great chain - We went to Riu Punta cana and it was excellent there are 5 hotels to choose from. Mexico, and Cuba also have Rius. Any of the resorts that have wedding packages are good - look them up and then go to debbiescaribbeanresortreviews.com Its a good travel forum that will also review destination weddings

We found that some guests didn't like that we would be forcing them to do an all inclusive resort. So, we selected two hotels and held our wedding at Le Kliff Restaurant - in Puerto Vallarta. www.lekliff.com ask for Carlos. The website is a little cheesy, but the place is amazing. check out the photos.
