I was the chair of the airway science program at Delaware State University - they have a good program. Many people I am sure will recommend Embry-Riddle, but it is terribly expensive and there are plenty of others every bit as good and a lot cheaper. I would suggest you select a school in an area with changing seasons so you get to experience both summer and winter flying. You might try UAA - the University Aviation Association - which lists all the schools with airway science programs and has lots of other very good information about airway science programs in general.

What in the world is "airway science"? It sounds like a one day lesson in medical school, not an entire program. You know, airway, breathing, circulation.
