Ya know what is interesting about your question? You know the answer. You know you might get arrested or fined. You know it is wrong. You know it is against the law. What you really want is someone to say it is worth the risk.
Is it?
Remember, attitude is a choice.

Go to www.safetysign.com
Buy a street sign that says "High Street"
It will cost about $50
That's a lot less than the fine (or jail) and record you will get for stealing it.
(I have no connection with this company.)

Yep. That is stealing city/county property. And you can go to jail as it would probably be a felony.
Not to mention if the police and ambulance workers depend on street signs to get to emergencies, you could cause a life to be lost due to your behavior.
If you look on the internet, you could probably find somewhere to make you the sign you want without causing any problems.

You can get arrested, and may do 10 days and community service for stealing city property.

Ummm, yeah. And if the police see you do it, you WILL be arrested.
In CA a few years ago some kids stole a stop sign. Later someone ran the stop and was killed by an oncoming car. Those kids are in jail now for manslaughter.

You can be arrested for theft of government property, pay a fine and still have to return the sign. Fines here are $140.00 plus your name in the paper. I advise not to do it!

I agree with the man above me! It is a crime and a fine, jail time, depends on if you have ever committed any other felon before....is the sign worth it????

It would be considered Petit Larceny, which could (but probably wouldn't) net you a year in the County Jail.
