Meat!

Nah I'm just kidding. Turkey Ground Round. I like beef better but either is good. Why don't I just give you my recipe. Ok, the meat, spaghetti sauce of your choosing, 2 eggs, black pepper, seasoning salt, croutons (to hold it together), mix with hands, shape to pan, place in oven and WA la!

You can substitute any meatloaf recipe. If it calls for 1/2 c. crushed cracker crumbs, just use 1/2 c. oatmeal instead.

As for the topping--you can leave that off totally. I make a great meatloaf that has ketchup IN it, but not ON it, and you really can't taste the ketchup that's baked in. If it's a tomato allergy, you can substitute with something else. A little bit of milk, a small bit of chicken broth, etc. Or, you can just leave it out totally. The top of the meatloaf is naked. I'll post it below, and you can substitute accordingly if you want to use it. Everyone who has eaten it raves about it and wants the recipe. :)

1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers (OR oatmeal!)
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup (or chicken broth, beef broth, milk, etc.)
2 tablespoons steak sauce

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.

I use this one and everyone loves it even people who swear they don't like meatloaf, but instead of the ketchup I use marinara sauce and sliced cheese layered corner over corner on top, put on about 20 mins before it's done. and no one ever knows theres spinach in it even people who claim they hate it,



1½ hours 20 min prep
Change to: servings US Metric
1 1/2 lbs lean ground beef
2 egg whites
1 cup fresh soft breadcrumbs (white or whole wheat)
salt & pepper
1 shallot, minced
2 cloves garlic, minced
1 1/2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1 (10 ounce) package frozen chopped spinach, thawed and very well squeezed
3/4 cup lowfat mozzarella cheese, grated
1/8 teaspoon ground nutmeg
1/4 cup ketchup (optional)

1. Mix together the beef, egg whites, breadcrumbs salt& pepper, shallots garlic, worcestershire sauce& oregano.
2. Use your hands to really combine the mixture.
3. After you have squeezed as much moisture as you can from the spinach combine it with the cheese, nutmeg& season with salt& pepper.
4. On a piece of plastic wrap or wax paper spread out the meat mixture in a rectangle apprx 12 x 8".
5. Spread the spinach mixture on top leaving apprx 1/2" clear all around the meat edges.
6. Using the paper (plastic) to help roll up the loaf starting from the 8" side.
7. Press gently as you go to make sure you have a firmly rolled loaf.
8. Press the outside edges together.
9. Tightly wrap the meatloaf in plastic wrap (or wax paper) and refrigerate for at leat an hour (I make the loaf the day before and leave it rolled in the fridge over night to be baked the next day).
10. Place the meatloaf on a roasting rack in a roasting pan and bake in a 350F oven for 1 hour.
11. If you are using the ketchup spread it on top of the loaf before putting it in the oven.

I use 2 & 1/2 lbs ground beef, 3 to 4 slices of bread or cup of bread crumbs, 1/2 cup onions, and 1/2 can of Campbells mushroom mix together and I spread the balance of the soup on the top of the meat. Sometimes I put cheese on the 1/2 of the top and sometimes just Del Monte Catsup on 1/2 of the top. (what ever) yum!

MARK’S MEATLOAF

1 ¾ lbs. 90% lean ground beef
2 eggs
2 oz. olive oil plus extra for cooking
6 oz. beef stock plus extra for drizzling
½ cup grated Parmesan or Romano cheese
½ cup plain bread crumbs
A hefty handful of chopped fresh parsley
Generous sprinkling of kosher salt and black pepper

Mix all of the ingredients in a bowl and place on an oiled sheet pan. Form a uniform rectangle 1 ½ - 1 ¾ inches in height. Place into a 350 degree oven. I remove it when the internal temperature has reached 140 degrees which is medium. Heat the remaining beef stock to a simmer and drizzle over slices of the meatloaf.

Ingredients:

1 Family pack ground beef
1/2 large onion, chopped
1 bell pepper, large
3/4 of a small can of evaporated milk
2 eggs
1 1/2 packages of crackers
A-1® Sweet and Tangy Steak sauce
1 small can tomato sauce
1/2 bottle of ketchup


Glaze:
1/3 cup Dark Karo® Syrup
1/2 cup Ketchup
1/4 cup Brown Sugar

Instructions:

Place ground beef in large bowl.
Add chopped onion and bell pepper.
Pour in a whole bottle of A-1® Steak sauce, 1/2 medium bottle of ketchup, 1 small can tomato sauce.
Beat 2 eggs in cereal bowl and add enough evaporated milk to fill bowl.
Pour in meatloaf mixture and mix with hands thoroughly.
Add enough crackers to make the mixture stick together.
Recipe makes 2 large loaves, so you may split and freeze half.
Mold meat into a loaf in a roaster or similar deep dish pan.
Bake at 350-375 degrees for about an hour and a half, or until it appears to be done.
You may also drain some of the juice off of the loaf before you top with glaze, but not too much because it will result in a dry meatloaf.
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered until coating is cooked. Slice and serve.

Ingredients:

2 pounds ground beef
1 large onion
1 bell pepper
3 eggs
1 large can carnation milk
18 oz ketchup
black pepper
corn flakes (1 handful)

Instructions:

Preheat oven 350 degrees F.
Put beef in a bowl.
Cut up onion and bell pepper, then add to beef.
Add eggs and 3/4 of ketchup and black pepper to taste.
Crush a handful of cornflakes, add and mix well.
Then add milk, mix and shape into a loaf in a pan.
Bake until done, approximately 1 hour 20 minutes.
Spread the remainder of the ketchup on top of the meatloaf.
Bake another 10-15 minutes.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 375, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

Start out with very lean ground chuck (2 lbs)
Cut up green peppers and onions
add 1 egg
add some A-1 steak sauce
1 package of onion powder
8-ounce can of tomato sauce
mix it all together really well (with your hands)
cook at 350 degrees for 1 hour. Enjoy......

I have 5 kids...SO...I make a big meatloaf...BUT...I take 3lbs of ground beef,3 eggs,A box of stove top stuffing sage blend,around 2 cups of milk,1 large onion,a dash of onion powder,A dash of garlic salt,a touch of pesto(just added that one the last time) Mix well...Add extra bread crumbs if need to tighten it up.Make into a loaf...A little more pesto spread on top...then paint the top with ketchup

Anyway, I have a recipe for cheese stuffed meatloaf...Place half of the groundbeef mixture in pan, sprinkle with mozzerella cheese, another layer of meat, top with tomato sauce, cook the same amount of time..Yum

No matter whose recipe you choose you've got to try this at least once.
Once you've mixed ingredients together flatten out the meat mixture and run mozzarella cheese (about a cup or less of shredded) down the center. Roll it up and seal ends. Bake
