Look for prep cook jobs. You might be able to find those at country clubs, bistros, those kind of places. Start low and work your way up. Document everything you learn and do. You could also work with a catering company. Life experience is what they're looking for. The CIA is looking for how serious you are about learning fine cooking. They're strict, but getting that degree is golden and will open tons of doors for you.

You can take technique classes with and get internships in restaurants through local schools.

Find a community college that offers culinary courses and learn technique. Then then once you have the skills you need, they will give you an internship in a quality restaurant and THEN you should have no problem getting into the CIA.

I don't know if it's hard to get into, I went to The French Culinary Inst.

I am answering this from my dorm room at the CIA lol...yes im a student at the culinary...all you need to do is work in an establishment that doesnt involve fast food. A chain restaurant will work too (olive garden, outback steakhouse, etc) It is somewhat tought to get into.

Start as a prep cook, and work your way through the different job stations in a kitchen.
