What is the name of the food processor that whips olive oil into a butter type spread? I remember seeing an infomercial for a small food processor that will whip olive oil into the consistency of soft butter. Or one like it would be fine too. I think it has to be a higher speed than most. If you have any experience doing this I'd like to know if it works and how it turns out?

Any Oil by itself will not become a spreadable commodity on it's own not matter how fast or how much you whip it. An emulsifier (mustard, egg, etc.) needs to be added for the oil particles to congeal to make a mass that would be considered spreadable. Any processor will do it with the proper ingredients

If you chill the olive oil in the refrigerator (like overnight and keep it in there), you should be able to food process it like that on a very high setting. Try it with what you have first and see if that reaches the consistency you are looking for. Just remember to chill it beforehand and then store it in an airtight container in the fridge.

Try putting your olive oil in the fridge. It should solidify to a spreadable consistency.

Or, make aioli without the garlic --

-- not quite butter texture -- mayonnaise, really, but still spreadable.

And, go find something else to do at 3am besides watching television...

Have you see the spreadable olive oil in the stores? I think it's made by Parkay or Country Crock.

any high quality food processor should whip enough air into your oil to make it creamy.
