I saw Nigella make a bread and butter pudding that looked yummy with it. Brown bread spread with lots of butter and lots of ginger marmalade, cut in triangles, pour in custard, top with brown sugar and *more* butter, a sprinkling of ginger and bake.
Serve with cream....

Add it to a marinade for pork chops or chicken. (e.g.Teriyaki sauce)
Make a glaze with it. Maybe thin a bit of the marmalade w/ orange juice, water, or rice wine and add some soy sauce, sliced scallions, and white pepper.
Use it like chutney. It might be tasty with ham or smoked turkey.
You can embellish it with some fresh mango cubes, apples or pineapple w/ raisins. You could also add some plain yogurt for a little tang.
If you have a recipe that calls for orange marmalade, make a blend of the ginger & orange marmalade as a substitute.
Orange Ginger Pork Roast
* 3/4 cup orange marmalade
* 2 teaspoons lemon juice
* 1/2 teaspoon ground ginger
* 1/2 teaspoon dry mustard
* 2 pounds boneless pork roast
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, mix orange marmalade, lemon juice, ginger, and mustard.
3. Place pork in a medium baking dish, and, glazing frequently with the orange marmalade mixture, cook 20 to 25 minutes in the preheated oven to an internal temperature of 160 degrees F (70 degrees C).

I'd try it with everything. When I find a new condiment I sample it in the kitchen often before it hits the dining room table.

Czechoslovakian Cookies

Ingredients:
1/2 pound butter
1 c. sugar
2 c. all-purpose flour
2 egg yolks
1/2 c. preserves, jam, marmalade, etc.
1 c. walnuts, chopped (reserve some for top of cookies)
Directions:
Cream butter, adding sugar gradually until light and fluffy. Add egg yolks, one at a time, blending well after each. Slowly add flour, and fold in chopped nuts. Spread half of dough into a greased 8x8 pan.
Cover bottom cookie layer with jam and then spread remaining dough on top. Sprinkle with reserved nuts.
Bake for 1 hour at 325 degrees. Cool. Cut into bars or squares.

Use it in a stir fry and add a little soy sauce to couteract the sweetness if needed. I am with you -- I love ginger -- especially candied and fresh.

try coating a chicken breast with it and baking for 30 Min's at 190c.
or add to stir fry
chicken, onion, peppers, mushroom, garlic, marmalade and soy on a bed of rice.
what time is dinner!

I would use it in stir fries or to marinate fish before grilling. sound yummy! Or make a dipping sauce for eggrolls or wantons using it and some soy sauce
