Also, I think the brie is herb-encrusted, does it matter? Can I cut off the rind, or should I just give up the baking idea and serve it plain?

Baked Brie in Phyllo with Mango Chutney

INGREDIENTS
3 sheets phyllo dough, thawed
3 tablespoons olive oil
1 (8 ounce) round Brie cheese
1/4 cup mango chutney
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place on sheet of phyllo on your work surface. Brush with 1 tablespoon of olive oil. Lay a second sheet on top of the first, and brush with an additional tablespoon of olive oil. Place the third sheet on top. Place the brie towards the middle of one of the narrow edges of phyllo dough and roll up. Fold the ends of the phyllo under the brie, place onto a baking sheet, and brush with the remaining tablespoon of olive oil.
Bake in preheated oven until phyllo is golden, about 15 minutes. Place onto serving platter, and spoon the mango chutney over top.

1/4 cup packed brown sugar 1/4 cup chopped macadamia nuts or pecans 1 tablespoon brandy 1 14-ounce round of Brie apple wedges pear wedges lemon juice crackers Directions: In a small bowl stir together the sugar, nuts, and brandy. Cover and chill for at least 24 hours or up to one week. At serving time, place the Brie on an ovenproof platter or pie plate. Bake at 500 degrees F for 4 or 5 minutes or until the Brie is slightly softened. Spread the sugar mixture in an even layer on top of the warm Brie and bake for 2 to 3 minutes longer, or until the sugar melts. Brush the fruit wedges with lemon juice and arrange them around one side of the Brie. Place crackers around the other side. Yield: 16 to 20 Preparation time: 10 minutes Cooking time: 10 minutes Ease of preparation: Easy You could have gone to her website and looked this up, like I did.

I had this at a restaurant in NJ and it was really good. There was a raspberry sauce that really complimented the dish.

The place is called Fritzy's - it's a German restaurant...maybe you can get the recipe from them.

Rachael Ray did something like this on one of her shows. Maybe you can look through the archives on her tv show site and see if you can find it? It looked really good.. .

yum - another good idea would be to serve it with a good tomato cream similar to Spanish gazpacho (made with cucumber, green pepper, garlic, onion, oil and bread softened with water and a drop of good vinegar)...
