I am constantly asked to make my gumbo when a "happening" is around the corner - anyone else enjoy this? And if so, what do you do to make it "fan-damn-tastic"?

Have a batch going right now, who's in?

i have great roux, I have had 2 beers, and the shrimp are HUGE!

I also like to the andouille (sp?) sausage the best.

this beast will cook until 9 tonight - then we will eat. I also make the corn muffins with cheddar and minced jalapenos - may not be total LA style, but I dig it!

I'm a cajun girl from the heart of Bayou Country and I make a great gumbo if i do say so myself. Our family's favorite is chicken and sausage gumbo. I always use fresh not dried seasoning (garlic, parsley). Be sure to cook the seasoning in the roux for a good long time on simmer. Don't forget the gumbo filet and Tabasco sauce.

I follow Emril's advice and have two beers while the roux is setting... ;o) That usually lightens my mood.

OMG - I'm in!!! Hope you make yours with big fat shrimp -- I have had some with tiny little overcooked ones, yuck.
