You can cut it up in strips and put a little olive oil in the pan, just dont have the heat up too high, maybe on medium and cook it slowly. When you notice the bottom and sides of the chicken start to turn white, then its time to turn it over and cook for the same amount of time. When it looks like it has all turned white, check one of the biggest pieces by cutting it with a knife. If all the pink is gone, its done, if not then cook for just 2 or 3 minutes longer. Just keep checking it. And if you check one of the big pieces then you know all the other pieces are done as well.

Liquid in bottom of oven dish (water), lid on top; max cook time of 1 hour at 350 degrees; chicken breast will be moist.

I place slices of onions at bottom of oven dish, and place chicken breast on top. Add half cup of water, and add other favorite vegetables all around.

I find covering it with foil for all but the last 30 minutes keeps the meat moist but still gives the skin an appetising colour when roasting; alternatively covering with streaky bacon - the bacon tastes great!

You can take cooking paper and make little parcels, with vegetables, spices and a little liquid (stock/ wine/ tomatoes). Seal the parcels and bake. The chicken will be very delicious and melt in your mouth.

The best way is to brown the outside first to seal in juices, then finish up in the oven, but do not overcook it.

Bake it at 500 degrees for 10 minutes. You'll need to flatten them so they're thin (which I think makes them more tender anyway), so they will cook thoroughly.
