Cheese is milk in essence but it's not as simple as just leaving it to go off, there are lots of different cheese making processes which is why there are all sorts of different cheeses.
And you could leave a pint of milk in the fridge for a year, and then put it on toast and eat it-there's nothing to stop you.
Apart from the god-awful smell, taste and rather unpleasant effect it would have on your digestive system that is.

Not rotten milk as such... milk that has been split into curds(solids) and whey(liquids) using cultures (certain bacteria). Cheese is made from the curd which is usually drained and or aged under certain conditions. Commercial cheese making is quite technical.
You can (safely) make certain kinds of cheese. Some people even make thier own yogurt (you can buy the culture.)
There is a middle eastern type of cheese called labna (yogurt cheese) it's really simple if you get one tub of set yogurt and the juice of one lemon and about 2tsp salt and some cracked balck pepper, mix it up. Place it in a musilin bag over a bowl in the fridge for 2-3 days. (you will see the bowl fill up with liquid). You can then marinate it with chilli and orange zest in olive oil for about a week... it's soooooooooo good!

No. I am no expert but apparently cheese is created from milk that has been curdled with a special enzyme called Rennet. I remember the story that cheese first came about because tribes people used to wash the stomach of a slaughtered calf and use it as a bladder to carry liquids. They found that milk always curdled (because of the rennet in it) and clotted into that clumpy stuff (cottage cheese?) over time they worked out what was going on refined the process to create cheese as we know it today.

yeah basically, they curdle milk, and then they add some other ingredients, it depends on what their making whether it be yogurt, cheese, or cottage cheese. but they all get set out for a long time.
no you could not make your own cheese, because when people make cheese, they have to cure it and all that stuff. if you left milk in your fridge for longer than its experation date like that, then it would make you really sick. (and you wouldnt like how it tasted).

it is neither that easy nor so awful,milk goes through a lomg & careful process before it can be consumed as cheese.Warm milk is treated with enyzmes,or starters,rather like yoghurt but of a different nature,whey then seperates,solids are set in moulds & they undergo a lenghty process of ripening or maturation,it then looks & tastes like cheese,spoilt milk is just that & not cheese.not by any chance.

No, it is not rotten.
Fresh milk is curdled by adding something like rennet.
I have made simple curd cheese by adding lemon juice.
