It might sound strange, because some of us know pigeons from the dirty streets, and the dirty water they eat from the puddles after a rain. and the poop they leave all over the place.

But I did speak to many people that lived in Poland Post WWII, they weren't the wealthiest people, and they said that in those days Pigeon was a delicatessen. They would stuff it like we do with chicken.
actually if you go to some live poultry places here in NY, at least some Chinese ones I went to, sell pigeon as well. So I guess some people like it.

Pigeon is very good. However, I would not eat one from the filthy cities because of what they eat there, but those in farming areas and pen raised are fine. Also, Doves, which are small pigeons , are also good.

I race pigeons and often eat the bad ones the best thing that I have found is to lock them up and feed only corn then when you clean them you take out the breast wrap this in bacon, salt and pepper it and then smoke them with the bone side down you can also add pepper ( Jalapeno, Poblano, or Red Bell ) you have to be careful as you can dry them out if not careful to use low heat

It tastes just like chicken. My grandmother had tons of pigeons and chickens back in the day in the homeland. No one made enough to go buy chicken and eggs at the store. In fact, there were no actual physical stores.

Really don't know, but they used to raise pigeons years ago, and ate them, they are called squabs at high end restraints now days.Try looking them up on the net?

My neighbor used to shoot pigeons and cook and eat them. This guy scored a son with his first wife. lol
