generally the best eating wild hogs are going to be those under 150 pounds. i go for about 80-100lbs personally. what you will run into is this. a group of hogs come out and you try to pick one out to shoot. it's hard passing up a 300+lb hog to shoot a little one. another option you can do is put hog traps out. you can pick the ones you butcher and can even load up the big ones and sell them. call around to your local cattle auctions and see if they do hogs. they don't bring much, but a trailer of hogs at about 40 cents a pound can add up quick when you get some big boys. the local sale barns here will not take them under 100lbs so thats fine with me, those are the one's i want to butcher and eat anyway. hope this helps.

i try to shoot between 70-100lbs for eating
i will tell u this though.i watched a hunting show one time and the host said to shoot even baby pigs as well as adult.the reason being because they mate so much and have so many pigletts when they give birth.if i am not mistaken a yearling sow can actually have 2 litters of about 13 other pigletts.now if u keep going through this cycle after even 2 or 3 years,look how many pigs u have now.
i guess that is why there is no season or limit on them in texas.

Shoot sows and shoats for eating. Boars, even two-year-olds, may be too gamey, and mature ones will run you out of the kitchen with the smell. If you must, try those under 150-175 pounds, but only the larger ones if you're starving.

Depending on what its been eating but a rule of thumb is: Under 150 lbs. for eating especially if it is a male.
