or will they only come out making it bitter tasting-seems like I've heard that before

By all means, use them! They add great flavor. I always save the tops in a ziplock in the fridge until I'm ready to make stock. Another easy trick for good stock is to keep a bag of baby carrots in the freezer. I don't even cut them or the celery up, just toss them in.

the leaves make lovely stock, but the yellow stuff makes it bitter. Another good favor is celeriac which is celery root. Big ol knobby thing, but very good flavor!

Actually, this is the sweetest part of the celery and they are really good in making stock.

Yep.

The inner stalks and the leaves are sweeter than the outer stalks and they add a nice aroma to your stock.

Do use them. They actually have a sweeter,milder flavor than the coarser outer stalks.
