Actually, it's a myth that he cut off his ear. He cut off a tiny portion of his left ear lobe, following a fight with Gauguin.
Here's something interesting, from the book "Creativity & Madness," by Barry Panter, et al.:
"Vincent was born March 30, 1853, in Zundert, Holland, near the Belgian border. Exactly one year prior to the day of his birth, his mother had given birth to a stillborn child who was named Vincent Wilhelm van Gogh. The stillborn child was buried in the graveyard behind the church where Vincent's father was minister. For the first 12 years of his life he walked past a grave with his name on it."

The old story about him cutting off his ear and sending it to the woman he loved is hogwash. He attacked his best friend, Gaugin, in the street with a knife. He then went home, and in a fit of remorse and self-hatred cut his own ear off as a way of showing penance for his violent act. As mentioned earlier, it is considered more than likely that he was manic-depressive, or what many people now call 'bi-polar'.

The reason he used so much yellow in his paintings may have been due to him being overmedicated with digitalis - People receiving large and repeated doses of this drug often see the world with a yellow-green tint.
