There are several stages in candy making that are used to test the viscosity of candy two examples are soft ball (caramel) and hard crack (toffee) When you make caramel the basic ingredients are sugar corn syrup and usually some kind of flavor now allot of people use allot of other ingredients but the base its all basically melted sugar and stabilizers. caramel can take a while to cook and throughout the cooking process water evaporates so if you take the liquid caramel and drop it into a cup of cold water it will condense and it forms a soft-firm ball it is done. if you were to continue cooking eventually when you drop the same mixture into water it will form a hard ball or it will for a hard ball and then crack generally toffee is supposed to be somewhere between the hard ball and hard crack stages.
