Of course there are lots of recipes for for tortillas on the internet, but I am not sure what characteristics to look for so I can pick a recipe that will give me the kind of tortilla I want. What I want is a tortilla for making burritos. I like to really pack those burritos full of stuff, so I need a tortilla that is sort of stretchy, so it will stretch and not tear, and accommodate all the contents. I normally buy Azteca brand flour tortillas and they tear so easily. Taco Bell burrito shells are a little better but not the best. Qdoba burrito shells are the best ones I've tried, if I could make a tortilla at home like those ones it would be great. Seriously, I ordered a Qdoba burrito once that was stuffed so full I needed both hands to hold it and it was heavy too, but it didn't tear at all!

I hope you like the taste of Tortilla De Patas:

Ingredients: 8 potatoes - peeled and cut
1 onion - thinly sliced
6 eggs
salt
olive oil

Method: Take a pan and deep fry the potatoes on slow flame.

Once done, add onions and cook for five more minutes, when it is well cooked remove from the fire and strain out the excess oil.

Take a bowl and beat the eggs. Add the potatoes and the onions to the egg. Also add salt.

Heat oil in a pan and spread the egg mixture. Allow to cook until done on one side.

Turn over the whole mixture and allow to cook the other side as well.

Serve hot.

buying aztec tortillas is like using paper to hold water. Those things are thin and horrible. Best when buying tortillas to buy the not so popular names or buy them off the ethinic ilse. Look for a thick ones. I usally by ones right off the ethinic food section. Also i dont now were you live but if you live in a area that has a mexican food store you could always just go there and thet some. Also when making them recipe is pretty basic like makin bread its how you roll and pat them out. Leave them a little thicker so they little more hefty. Good luck its a long proccess. but sooooooooooooooo freakin worth it love homemade torrtillas!

I love this recipe - it's fun and easy to do, plus it has corn and flour, which I think make for a great tasting tortilla.

INGREDIENTS

* 1 1/2 cups all-purpose flour
* 1 1/2 cups cornmeal
* 2 teaspoons baking powder
* 3/4 teaspoon salt
* 1 cup warm water (110 degrees F/45 degrees C)

DIRECTIONS

1. In a large bowl, stir together the flour and cornmeal. Add baking powder and salt, and mix together well. Stir in water to form a crumbly dough. Work dough with your hands until it holds together.

2. On a floured surface, knead dough until smooth. Divide dough into 10 to 12 pieces. Roll each into the shape of a ball. Cover lightly with saran wrap and let rest for 10 to 15 minutes.

3. Flatten each piece of dough by hand, then roll into a 8 to 9 inch round.

4. Heat a large skillet over medium heat. Lightly grease the hot pan, and place one tortilla in the pan. Cook tortilla until light brown, turning to ensure equal browning. Repeat with remaining tortillas.
