I put clean canola oil in my pan, put frozen fries in and it stunk badly.
The fries were good, but it stunk up the house.
Any constructive ideas?

canola oil is rape.
that is, it is made from rapeseeds, a type of mustard seed that is poisonous, from rape plants.

(but canola oil, named for canada instead of rape, which might not sell so well, is not poisonous)

traditionally, peanut oil is best for deep-frying sweet things.

Corn oil is nice for frying non-sweets

Olive oils are too heavy to fry with- they will stink up your house and smoke on you. The best bet is any light colored oil. I usually use peanut or vegetable oil. They rarely smell (depending on what I'm frying) and they get to a higher cooking temperature than the darker heavier oils.

Olive oil is your best choice to cook with, period. It has a positive impact on your health with poly and mono unsaturated fats and omegas. If you're deep frying, though, olive oil is just to "rich" tasting. If you are making veggies or meats, I use olive and canola together for a good mix. It's beneficial for you healthwise, but not too "rich."

the reason it did that was there was to much water in the fries either let them thaw 1st or cook less at a time

its depends on what your making. for example if u fry samosas i intend to use sumflower oil or veg oil?
