Even the smallest trace of gluten eaten will cause a reaction for true celiac sufferers. Gluten intolerance may depend on the amount ingested. Because eating gluten if you are celiac can cause such damage and may lead to cancer down the road it is very important to take seriously. You will have to adapt to a new diet, do lots of research and read every food label you buy.
Tips for celiac:
1)Remember that ingredients like citric acid and natural and artificial flavours may contain gluten.
2)Take food with you, always have a snack handy as gluten free snacks are not always easy to find.
3)Contact manufaturers as some have lists of thier gluten free products and others you can inquire about specific products.
4)Look for a baker in your area that can make gluten free breads for you, and other goodies.
5)Read every label, and do research to find out common gluten containing ingredients as it is in lots of ingredients: eg: MSG

To test for true celiac disease a biopsy must be done of the intestine WHILE you are still eating gluten to see if the microvilli are being destroyed. If you are eating a gluten free diet it will not show up as there will be no damage. Consult your doctor for help on when to get tested.

The more gluten that is ingested the worse the symptoms would be. Sounds like you need a Carbohydrate "fix". Me too.

I tend to think that even a small amount will trigger the symptoms but perhaps they will be milder.
