Just play along with their beliefs. Pretend that their religion is a very rational choice, and that their beliefs are most likely the correct ones.

But I do not like lying. People expressing their beliefs or lack of beliefs that are different from Christians will likely be seen as persecution by some Christians.

Given that any petty slight is persecution to these people, I can't really give you a good answer for that one. Their sense of entitlement is so inflated that they think society owes them our tax money and public property. They become furious when they don't get their way. They are exempt from most laws and still claim to be persecuted. They're not persecuted. They're deluded.
