OH! Kids will LOVE this!

-cut it in half from stem to tip. this takes some muscle and a real --sharp knife, so be careful!
-Place in a steamer, cut side face down.
-Steam for about an hour.
-take out of steamer and put aside to cool, make sure to drain the water off.
-Put it on a plate when cool, with a side dish of mayonaise.

To Eat:

Pull off a leaf (the first layer is tough) when you get down to the layer that is tender, put the leaf in your mouth with a dap of mayo between your teeth with the meaty side down and scrape all the meatty stuff off with your two bottom front teeth.

This is fun to eat once you get the han of it, kids will love it, I did!

For kids, cut about half inch off the stem, let them use the scissors to cut the prickly tips of the leaves. Slice for them longways into quarters, let them scoop out the purple fuzzy insides with a spoon, let them wash the four peices and wrap in plastic wrap with the artichoke dripping wet. You will need this water for steaming. Set it on a plate and zap it for about 4-6 min.
If they can reach the microwave, let them take it out with oven mitts and place on something that is not heat sensitive and let sit for a few to rest and be able to be handled by the kid.
You can also put a little butter in with that too. (Remember to let it rest. Steam is hot but can be cooled to safely handle. Kids should never use boiling water at all until thy're ready.
Yummy, easy, and fun for the kids. Some people like to dip the leaves in melted butter and garlic, some like mayo.

* STEP 1: Cut about an inch off the top of each artichoke.
* STEP 2: Cut off base and remove small outer leaves, if desired.
* STEP 3: Pour an inch of water and a lemon wedge into steamer and allow to boil.
* STEP 4: Place artichokes into vegetable steamer, tips up.
* STEP 5: Cover and cook for 25 to 40 minutes.
* STEP 6: Cut into base of each artichoke to check that it is soft, and make sure inside leaves can be pulled out easily.
* STEP 7: Cook five minutes more if artichokes are not done, and then check again, repeating as necessary.
* STEP 8: Drain artichokes upside down on paper towel.

the middles "hearts" should be soft and edible, and the leaves should be edible to a point - the fleshy portion closer to the body of the artichoke can be scraped off the leaf with the teeth. i loved eating artichokes as a kid because it was finger food!

1 package English muffins (I use whole wheat or oat bran)
3/4 cup ranch dressing
2 Artichokes (boiled till semi-oft)
1 (4 ounce) jar sliced pimientos, drained
1 cup shredded mozzarella cheese
3/4 cup grated parmesan cheese
red pepper flakes


Cut the English Muffins in half and toast lightly.

Combine remaining ingredients, except for 1/4 cup Parmesan to sprinkle on the top.

Spread the cheese mix onto the muffin crusts and sprinkle the saved Parmesan on top.

Bake at 375 for around 15 minutes.

Let sit for 5 minutes before serving.

put a little water in a pot and steam them! my mom used to do this for me and my bro and we loved it when little (still love it today) ...for an easy sauce to dip them in just use mayo and some capers w/ a little splash of lemon...healthy and yummy
