Okay, actually, I'm not sure about the "less calories" part, but this will at least give you some variety. Take a head of lettuce, wash it off, and then quarter it. Take one quarter and put some dressing on it (usually bleu cheese) and sprinkle some bacon bits on top. It is not as fatty as it sounds because there is so much lettuce packed together in the quarter.

I invented this!
Put one can of black beans in a pot, boil with twice as much adobo as you'd normally use and a pinch of hot red pepper flakes.
Check the beans after 10 minutes to see if they are tender. if they are, pour in a strainer (save some bean juice) and run cold water over them untill they are chilled, drain untill dry, place in fridge.
fry up chicken breasts with garlic, salt, fresh cilantro and alot of lemon juice. Let the garlic burn, it tastes good that way!
When the chicken is done, tear it apart and let it cool in the freezer. shred it fine after it is cold enough to handle.
boil corn then let it drain and cool off.
put the bean juice you saved out into a blender with tomatos, cilantro, lots of lemon juice and some adobo for salad dressing.
Chop up some tomatos, cilantro and lettuce.
toss the lettuce and cilantro with a bit of salt and lemon juice, put on some chicken, a handfull of beans, corn, and chopped tomatoes. Pour on the blended dressing and damn it's good!
the lettuce, cilantro, tomato and lemon have no fat, calories, carbs ect... the beans have lots of protein and just a few calories and no fat, and the chicken is super low in fat and has protein also!
a huge bowl has almost no fat or calories and just a few carbs from the corn!

Those nice pasta salads that you just cook and add mayo. I love those.
If its mostly veggies you want then try your standard salad (lettuce, tomato, cucumber, maybe some black olives with some Tuna (the kind in water not oil).
its making me hungry.

If it is for a meal then try cutting up a Morning Farms "chicken" patty and putting it on top. You'll get protein, alot of "chicken", and they are low fat and reasonable calories.
