Pineapple Coconut-cream Pie (lactose Free)
BASE
2 (400 ml) cans coconut cream
1 tablespoon honey
5 tablespoons cornflour
TOP
1 (825 g) can pineapples
1 tablespoon honey
5 tablespoons cornflour
Mix all ingredients of Base together using just a little of the coconut cream to mix the cornflour with first.
Cook on low heat till bubbling slowly and then till thickened.
Spread cooked mix into 2 medium size pie dishes and refridgerate.
Blend all pineapple from can and add juice last with a little mixed with all the cornflour.
Cook slowly till thickened and cooked.
Spread onto cooled bases covering whiteness.
Decorate with lemon slices, pieces of pineapple, strawberry or kiwifruit.

~~~~~~~~~~ Trawlerman’s Stew ~~~~~~~~~~
1½ lb/700g cod fillet
Salt and freshly ground black pepper
1 large onion
2 cloves garlic
1 green pepper
2 tbsp virgin olive oil
1 lb/450g potatoes
6 medium tomatoes
½ pint/285ml fish stock
1 tsp dried oregano
Fresh parsley for garnish
Skin the cod fillet, then wash and pat dry. Cut into 8 pieces and season generously.
Peel and finely chop the onion and garlic. Halve and de-seed the green pepper, then slice it into strips. Heat the oil in a flameproof casserole and add the onion, garlic and pepper, then cook for 5 minutes, until the onion is transparent. Meanwhile, scrub the potatoes and dice them into large pieces, and quarter the tomatoes.
Add the potatoes, stock and oregano to the casserole. Cover and simmer for 20 minutes, then add the tomatoes and arrange the fish pieces on top. Cover and simmer for further 10 minutes.
Chop the parsley, sprinkle it over the casserole and serve immediately. Serves4.
~~~~~~~~ Pork Chop with Barbecue Sauce ~~~~~~~~
4 spare rib chops
1 medium onion
1 tbsp virgin olive oil
3 tsp horseradish sauce
1 tsp mustard powder
1 tsp celery seeds
14oz / 400g can chopped tomatoes
2 tbsp honey
1 tbsp malt vinegar
1 tbsp Worcestershire sauce
Chopped parsley for garnish
Chop the onion roughly. Heat the oil in a saucepan and sauté the onion over a medium heat for 8 minutes until transparent. Add all the other sauce ingredients. Cover and simmer for 10 minutes.
Meanwhile, trim any rind and fat from the spare rib chops and place them in an ovenproof dish large enough to hold them in a single layer.
When ready, spoon the barbecue sauce over the chops, cover and bake in the preheated oven for 45 minutes until thoroughly cooked and tender. Garnish with parsley and serve. Serves4.

here is a great dessert and dinner recepie. ok you want to start by buying a pillsberry roll out pie crust then cut up apples ( red apples are the best kind to use ) into llittle bit size peices, put them in a bowl. then put alot of cinnamin and sugar all over them and toss them and stir them. put your bottom bace in the baking pan then fill it up with your apples that have been tossed and tirned. then put your top bace on there. put it in the oven at 350 degrese.
keep it in there for about.......20 to 30 minutes or intil brown. now the main cores. your going to need short noodles and some american cheese. first boil the noodles ontill there pretty soft and add the cheese. once there to the cheesey goodness you want take them off the stove and serve them then after that serve your pie with some vanella ice cream or some cool whip.

Lactose-Free Hash Browns
Ingredients:
1 potato
Lactose-Free margarine (such as Fleishman's unsalted), melted
1 teflon coated pan
Salt
Microwave potato until done.Refrigerate overnight.Peel the cooked potato and grate into the pan that has a little lactose-free margarine in it.Cook until brown, stirring frequently.
Add salt to taste.
Corn Chowder with Tomato Relish
Ingredients:
2 slices bacon, crumbled
1/2 cup chopped onion
1-2 cloves garlic, sliced
1 11-oz. pkg. frozen whole kernel corn, thawed
1/4 cup water
1 tablespoon cornstarch
1/2 teaspoon adobo seasoning or salt
2-1/2 cups 1% lowfat lactose-free milk
1/2 cup chopped tomato
2 tablespoons cilantro, chopped
1/4 cup dairy sour cream or plain yogurt
Directions:
Directions: In small skillet, cook bacon over medium heat. Remove bacon, reserving drippings. Add onion and garlic to drippings. Cook over medium-low heat, stirring frequently until onions are tender. Remove from heat; cool.
In food processor or blender jar, combine corn and onion mixture; add combined water and cornstarch. Cover; process until mixture is smooth. In a 2-quart saucepan over low heat, stir milk into corn mixture. Add seasoning; cover, cook stirring frequently 10 to 15 minutes. Combine tomato, bacon and cilantro; mix lightly. To serve, top each serving with sour cream and tomato mixture.
