I mean, he's all into squirting blood out of the wounds in baby lambs necks, "dashing infants to pieces" ....in his 'own' words.

God coincidentally sounds just like primitive bronze age men from the middle east....
any idea why?

Which God do you have reference too?
Jehovah, the God of the Jews, condemn such cruelty and educated his people on the sacredness of life.

In the times of Abraham and Moses. People don't know about proper hygiene. They didn't understand about germs, bacteria and virusis and how it will be transmitted.
They don't wash hands before and after eating. They lived with animals, they eat almost anything. They practice same sex, polygamy, orgy and sex with animals and lot of others. Diseases and epidemic raveges to these lands. STD's, leprosy and perhaps AIDS or similar are present with the population.
They only way to prevent infection and transmission of these diseases is to annihilate and massacre everything that is living in a givin particular area. Including babies and animals because they are host and carrier of different disease.

Just like Bird Flu, if a particular town have been reported to have case of such diseases they burn all avian species in that area to prevent transmission.

That is why God instructed Moses to observe proper hygiene to prevent Israelites from famine and diseases.
If we Today, heed to the simple instruction of do not commit adultery, perhaps STD's and AIDS are not present in our so called High Tech and Space Age.
When will Humans ever learn proper hygiene?

The old testament god was an angry god. He demanded sacrifice of animals and children. He created plagues which he inflicted upon Egypt because the Pharaoh would not let his chosen people leave (funny thing is, he "hardened the Pharaoh's heart against setting them free)
He was not above killing his children if they offended him, especially in the worshiping other gods area. He called himself a Jealous god.

I guess all in all, the people at that time invented a god to satisfy their needs just as we do now.

Because the people at that time were brutal animals. The reason they couldn't eat pork is because cannibalism was frowned upon.

the words squirting and dashing do not appear.

animal sacrifices and the shedding of blood of animals were reminders of the punishment we deserve for sin...however, in God's mercy, he forgives us...
