Shrimp & Lobster Chowder for a SUPERBOWL party
You may want to trip this recipe it's only for 2 pints:

Ingredients:

3 pints strong fish stock
1 lb. lobster shell
1 lb. shrimp shells or heads
8 oz. mire poix--leek, celery, carrot, onion
1 clove crushed garlic
1 1/2 tbsp. grade A tomato puree
1 each bay leaf
1 sprig fresh rosemary, tarragon and basil
salt and freshly ground white pepper and Worcester sauce to taste.
3 oz. butter
4 oz. smooth roux

Method
In a heavy bottom pan, melt butter and add lobster and shrimp shells. Fry until they start to brown.
Add tomato paste and fish stock. Bring to boil and simmer for one hour.
Strain and pound the shells until finely crushed, return to stock and add Mire Poix, bay leaf and garlic. Simmer for further half hour.
Strain again, bring to boil and season to taste. Thicken with the roux and simmer for 10 minutes to cook out the flour.
Strain through a very fine strainer

To Finish:
4 oz. Diced fish, shrimp and lobster
4 oz. Assorted diced vegetables
2 fl. oz. Fine cognac
3 fl. oz. Heavy cream
1 oz. Butter

Method
Melt butter and sweat diced fish and vegetables.
Deglaze with cognac and add the soup. Bring to boil, add cream and reduced for ten minutes.
Adjust seasoning and serve immediately.

Roux
4 oz. Melted butter and 4 oz. Flour blended together.

This is a recipe for crawfish chowder. I'm sure you can substitute the crawfish for shrimp and lobster.
When I use the crawfish, I use a package of crawfish tails.
Try this:
If you're using shrimp and lobster for this, I would use probably a half pound of each.
1 stick of butter/margarine
1/2 bunch green onions(chopped)
4oz cream cheese
1 pint size of half and half
1 can whole kernel corn (leave liquid)
1 can cream of mushroom soup
2 cans cream of potato soup
1/4 to 1/2 tsp red pepper
tony cachere seasoning to taste
saute shrimp/lobster/green onions in butter then bring all ingredients to boil and simmer 20-30 minutes
(You may want to use a little more of ingredients depending on how much shrimp and lobster you use)
this is really a great recipe

MARY VAWTER'S 1-28-68 SEAFOOD CHOWDER

2 cans (10 oz. each) frozen shrimp soup
1 qt. milk
2 c. water
2 pkgs. (12 oz. each) frozen haddock fillets
2 cans (4 1/2 oz. each) cleaned shrimp, drained and rinsed
2 pkgs. (10 oz. each) frozen lobster tail, cooked and cut up
1 tsp. dried green onion
1/4 tsp. thyme
Salt and pepper

Combine soup, milk and water. Bring to boil. Add fish, cut in 1 inch chunks. Simmer about 10 minutes. Add shrimp, lobster, onion and thyme. Simmer about 5 minutes. Season to taste. Makes about 2 1/2 quarts. Serves 4-6.

Seafood Chowder Recipe

2 medium potatoes, cubed
1 carrot, sliced 1/4 inch thick
1 medium onion, chopped
1 cup clam juice
1 cup water
2 tablespoons reduced-fat margarine
1 pound fresh lean fish (halibut, tuna, haddock, orange roughy, etc), cut into 1-inch pieces
1 (6 1/2 ounce) can clams, undrained
1 (12 ounce) can evaporated skim milk
2 tablespoons chopped fresh chives
1 teaspoon paprika
Salt and pepper to taste

Heat potatoes, carrots, onion, clam juice, water, margarine, salt and pepper to boiling in a large saucepan. Reduce heat, cover and simmer 15-20 minutes or until potatoes are almost tender. Stir in fish and clams, cover and heat to boiling. Reduce heat and simmer about 5 minutes or until fish flakes easily with a fork. Stir in milk, chives and paprika and heat through.

Makes 6 Servings
Serving Size: 12 ounces
