Here is a simple but classic method for that Southern delight, fried chicken. This recipe uses a flour coating rather than batter. Makes four servings.
Things You'll Need
1 c. all-purpose flour
1 tsp. salt
1 tsp. pepper
1/2 tsp. paprika
1/2 tsp. cayenne pepper
a 3-4 lb. frying chicken cut into pieces
4 c. canola oil
Instructions
STEP 1: Put flour, salt, pepper, paprika and cayenne pepper in a plastic bag. Shake to mix.
STEP 2: Add cut-up chicken pieces, with or without bones, to bag. (Smaller pieces cook more quickly, so consider cutting each breast half in two.) Shake to coat chicken with the seasoned flour.
STEP 3: Heat 3/4 inch oil in a heavy frying pan (preferably cast-iron) over medium-high heat, until it gets to 350 degrees F. Use a 2-inch-deep pan if possible to reduce spatters.
STEP 4: When oil is hot, shake any excess flour off the chicken and add the pieces to the pan a few at a time. Don't allow the pieces to touch in the pan. Fry the chicken in batches if your pan won't hold them all with space to spare.
STEP 5: Cook the chicken pieces for about 10 minutes per side. Regulate the heat as the chicken cooks, keeping the oil temperature below 375 degrees - use a deep-frying thermometer to the check the temperature. STEP 6: Drain chicken on paper towels.
Frying chicken is a messy business. Spread newspapers on the floor in front of the stove to keep the floor clean. Consider moving anything on the stovetop out of the way so it won't acquire a coating of grease.
Be very careful when working with hot oil. It can splatter and cause bad burns. Add chicken carefully to the pan, handling it with long metal tongs if possible

Take the chicken pieces & rinse off with water.
Get a bowl & put flour & seasoning (salt, pepper, garlic & onion powder) in.
Add piece of chicken & coat fully.
Either fry in a deep fryer at 350 degrees on in a pot of oil (enough to cover pieces) that's warm on med flame for 5-7 minutes.
Once oil is hot, slowly add chicken & fry for about 10 minutes for legs, thighs & breast & 6 minutes for wings.
Take the pieces out & sit on top of a paper towel to absorb the grease.
To check that it's done you stick a fork in it take the fork out & press onto the meat. The juices that run out shouldn't have any blood.

here's how to fry a chicken:
mix chicken with lime juice, soy sauce, and ketchup/tomato paste or sauce.. then leave it for about 15-20minutes...
and then prepare 1 beaten egg in a bowl and another bowl for cake flour or all-purpose flour (or bread crumbs).. dip one chicken at a time in egg and then roll it all over the flour...
heat a abt 4-5 cups of cooking oil (or the desire oil you wanna use and the measurement depends on the quantity of your cut chicken).. when oil is very hot, put in the chicken while adjusting your heat to medium.. wait until chicken are crispy brown. =) hope this helps!

marinate the chicken for several minutes. heat the frying pan, add enough amount of cooking oil ,put the chicken if the oil is already hot. wait until it is cooked (golden brown and no blood)

in a medium bowl put 3 eggs, in another bowl put flower salt and pepper, and in another one put bread crumbs, put the chicken in the egg first both sides then put it in the flower, then in the bread crumbs, then finally in a frying pan or a deep fryer it takes about 10 min or until golden brown.
