My son is doing a science project and he was going to study plants growth in salt water but the plant soaked up the salt and water and now all the leaves have crystalized with salt? Is there a name to what has taken place?

There should be lots of information on the web or in textbooks about plants that grow in salty environments (like mangroves and salt-marsh plants) and how they handle the salt. There has also been a lot of research on this topic driven by the need to remediate salty land (caused by rising water tables from irrigation, amongst other things).

As a teacher, my advice to you is to let your son do his own homework, take his own lumps....He may be able to go into school with a really great project, but the teacher will know it is not 5th/6th/7th grade level work and worst of all....your son will know it is not his work. You really are not doing him a favor.

Plus, wouldn't you like a life where it is not "you vs the kids"?
