The lowest temperature setting I've seen on a thermostat is 55°. How low you set your thermostat is entirely dependent on how much discomfort you are willing to endure. Before you set your thermostat too low, check your plumbing to make sure you do not end up with frozen water pipes.

The lower it's set, the more you save. Dress up warmly and turn it down, but not so low that you're shivering--chilled a bit should be enough.
