Quoted from source below.
"The 'farmer's wife' refers to the daughter of King Henry VIII, Queen Mary I. Mary was a staunch Catholic and her violent persecution of Protestants led to the nickname of 'Bloody Mary'. The reference to 'farmer's wife' in Three blind mice refers to the massive estates which she, and her husband King Philip of Spain, possessed. The 'three blind mice' were three noblemen who adhered to the Protestant faith who were convicted of plotting against the Queen - she did not have them dismembered and blinded as inferred in Three blind mice - but she did have them burnt at the stake! Cause they were aware that she'd gotten hold of a recipe for fried mice, only they heard it wrong, she actually had the recipe for fried Rice. Then Condi started running from her and hid in the bushes.

keep the photo!
she had a carving knife so she was probably carrying out some sort of food preparation thus drawing the mice to the delicious smell.
unless she had some sort of fungal infection and therefore smelt a bit cheesy and grabbed the knife when she saw them coming x
keep the photo!

They weren't really running after her. They were just running-blindly and coincidentally happen to be behind the farmer's wife. Pure coincidence really!

They were blind, therefor guided by smell, all farmers wives smell of cheese.
I think she over reacted by cutting of their tales.
When farmer Giles was wanting a wife (Ay I addio) he didn't realise he would get a sadistic ***** like her
