Spinach Artichoke Dip
2 packages frozen creamed spinach, thawed
1 jar marinated artichoke hearts
1 tablespoon of minced garlic
1 cup of shredded mozzarella cheese
1 cup of shredded cheddar cheese
1/2 cup of grated parmesan cheese
fresh pepper
Mix all ingredients and place in a buttered, covered casserole.
Bake at 350 for around 20 minutes or until bubbly Serve with tortilla chips or crackers.

Baked Artichoke Spinach Dip
Ingredients:
1/2 cup mayonnaise or salad dressing
1/2 cup sour cream
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese, divided
1 to 2 teaspoons Dijon mustard
dash white pepper
1 can (14 ounces) artichoke hearts, drained and coarsely chopped
1 cup coarsely chopped spinach leaves
1/2 cup finely chopped red onion
Preparation:
In a large bowl, combine mayonnaise, sour cream, parmesan, 1/2 cup of mozzarella, mustard and pepper. Stir in artichoke hearts, spinach and onion. Transfer mixture to a 1-quart casserole dish and cover, chill for at least 3 hours.
Bake at 350 degrees for 30 to 40 minutes or until thoroughly heated. Top with the remaining 1/4 cup of mozzarella. Bake 5 minutes longer or until cheese melts. Serve with bread or crackers.

SPINACH AND ARTICHOKE DIP

8 oz. Philly cream cheese
8 oz. sour cream
3/4 c. shredded Parmesan cheese
8 oz. shredded Monterey Jack cheese
1/2 onion finely chopped
1 stick butter
red pepper flakes to taste
Sauté onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.
Remove from heat and put in crocks or microwave dish. Top with Monterey Jack Cheese and melt.

Go to the store and get a box of Knorr-Swiss Vegatable Soup Mix. It's the one in the dry packets in the soup isle. It has the best Spinach Dip Recipe ever. The key is chopped water chesnuts, I believe. Makes for a good crunch. Also the seasoning mix in the soup gives it that "to die for" flavor. It's a can't miss, I guarantee it.
