It was on a steak and was green and delish!!WOot i had it and the paris themed(dont know how to spell the name) hotel in LV, Nevada

It was amazing if somone has recipes or knows what it is thank you please!?

Pesto is not a sauce the Paris in LV would put on a steak, nor would any red blooded steak lover either. Believe me I know.

If I think what you is correct it's called a "Chimichuri" sauce. It's South American in origin. I'm not sure exactly what's in it but google Chimichiri and you'll be able to see if that's what it was by the ingredients used to make it. It has chiles and different herbs in it as I recall.

I have to agree that the sauce was not a pesto but a Chimichuri sauce. It is an Argentinian marinade. Here is a recipe
# 1 bunch parsley, chopped
# 8 garlic cloves, minced
# 8 ½ fl oz olive oil
# 2 fl oz white wine vinegar
# 1 1⁄3 fl oz water
# 1 tsp salt
# 1 Tbsp oregano
# ½ tsp chilli flakes
# ½ tsp ground black pepper

Add the parsley, garlic, oil, vinegar, salt, oregano, chilli, black pepper and water to the blender and blend into a fine paste. Pour into a jar. (This will keep in the fridge for up to a week).

Was this at the Paris Las Vegas? Could it be the Béarnaise Sauce they serve on the Filet Mingon?

Béarnaise Sauce
4 egg yolks
1 lb. clarified butter
juice of 1/2 lemon
1 oz. tarragon
1/2 oz. shallots
1/2 cup red wine vinegar
1/4 tsp. paprika
Salt and pepper to taste


Sautee tarragon and shallots in the red wine vinegar over an open flame until all the liquid is gone. Beat egg yolk over a bain-marie until thick and creamy. Add the clarified butter one teaspoon at a time until combined. Stir in lemon juice, paprika, and tarragon reduction. Salt and pepper to taste.

It looks like a lot of the steaks in the hotel's restaurants are served with an herbed butter.

That might be it.

Why would a french themed hotel use chimichurri sauce? More likely it's a green peppercorn sauce commonly used on steaks.

For a steak, my guess is chimichurri. It's parsley based. Sort of like a parsley pesto.

I think it might be basil pesto. Go to www.foodnetwork.com and in the space labeled 'search', hit recipes then type in basil pesto. there should be a recipe! hope this is it!
