The basic rule is that 1 head of iceberg lettuce will serve 10 people.
If you are making pre- plated salads then it becomes a simple establish -the- portion -size on one plate and then multiply by 200 problem
Example:
Each plate will have:
lettuce
3 tomato wedges
3 cucumber slices
a health pinch of cross-cut sliced green onions
Then you do a yield conversion;
each tomato will yield 4 portions
each cucumber will yield - I don't know - 12 portions if hand sliced , 20 portions if machine sliced
and you keep scaling up the numbers.
4 portions per tomato/ 200 portions = 50 tomatoes
If you plan to do this on a regular buy a copy of Food For Fifty,
Everybody that does this for a living has a copy somewhere on their bookshelf.

It is an excellent site. You can browse salad recipes and find one that closest resembles what you're making then above the recipe they have a servings per recipe box. The neat thing is you can change the number of servings and it will convert the recipe for that number of servings.
I used it for a spaghetti fundraiser. I had no idea how much to prepare, but I was expecting 150 people. I went into the Spaghetti Sauce recipe that I liked the best, changed the servings to 150 and boom, there I had my recipe. Then they have a shopping list feature where you can place that recipe in and it will give you your shopping list.

Difficult to say but do remeber that i am sure there are other things that will be on offer at the event?
That means that people, on the whole, will only be taking small amounts as they will need room on their plates.
Use lettuce to bulk it up and keep it to chunkier pieces and it will make it go further

4 large bowls of mixed leaves.
4 large bowls of tomatoes cut into segments of 6.
2 large bowls of cucumber sliced.
2 large bowls of each:- sweetcorn, beetroot, mixed bean, coleslaw,potato salad, tuna mayo, sliced onion with baby spinach and balsamic vinegar.
Maybe a few other mixed salads.
A couple of plates of mixed meats.
A couple of plates of each cold meats like cocktail sausages, picnic eggs or halved scotch eggs, prawns, crabsticks, cheeses.
An lots of chunks of french stick with butter on the side.

do a buffet its safe and simple lots of finger food and some salads coleslaw,potato salad etc...keep it to a minimum,ive my (sons chistening cumin up and thats wha im doing dont 4get meat ham turkey and rolls!!!!!!
