I am not familiar with lamb. Can lamb chops be cooked rare or med-rare like beef steaks or does it have to be cooked well done like pork chops.

Rare lamb is fabulous.

350 for 20 minutes should do it. The internal temp should be about 130-135 for rare.

Just FYI, there hasn't been a case of trichinosis from underdone pork in almost 40 years, the cases that do occur usually occur in the Asian communities with meats other than pork and with wild game or unpreserved jerky. While I don't eat my pork rare, I do not cook it beyond pink. Tender pork is wonderful.

This website will tell you the whole story.

Just like a steak. The last time I checked Pork doesn't have to be cooked well done, they're raised differently then back in the old days of the 60's

You can cook lamb to any degree of temperature, just like beef, and it will be perfectly safe, assuming it's been safely handled. The same can be said of contemporary pork. The risks associated with undercooked pork have long since been bread out of the commercial pork supply. The same cannot be said for chicken.

Pink - Lamb is at it's best when it's pink in my humble opinion.
