Maine Lobster Lasagna
1 (15 ounce) container ricotta cheese
2 eggs
2 cups shredded Cheddar cheese
1 cup shredded mozzarella cheese 1 cup grated Parmesan cheese
1 medium onion, minced
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley
1 teaspoon freshly ground black pepper
2 (16 ounce) jars Alfredo pasta sauce
16 no-boil lasagna noodles 2 pounds cooked and cubed lobster meat
1 (10 ounce) package baby spinach
leaves
DIRECTIONS:
1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
2. In a large bowl, stir together the ricotta cheese, eggs, half of the Cheddar, half of the mozzarella cheese and half of the Parmesan cheese. Mix in the onion, garlic, parsley and pepper.
3. Spread 1 1/2 cups of Alfredo sauce in the bottom of the prepared baking dish. Top with a layer of lasagna noodles. Arrange 1/3 of the lobster meat over the noodles, cover with 1/3 of the ricotta cheese mixture, then 1/3 of the spinach and then another layer of Alfredo sauce. Repeat this process two more times ending with sauce on top. Sprinkle the remainder of the Cheddar, mozzarella and Parmesan cheeses over the top. Give the whole pan a gentle shake to get everything settled in.
4. Bake, covered loosely with aluminum foil, for 45 minutes in the preheated oven. Remove the foil and continue baking for an additional 10 minutes or until the top is browned. Let stand for 10 minutes before serving.

White Cheese Chicken Lasagna
Serves 12
9 lasagna noodles
1/2 cup butter
1 onion, chopped
1 clove garlic, minced
1/2 cup all-purpose flour
1 teaspoon salt
2 cups chicken broth
1 1/2 cups milk
4 cups shredded mozzarella
cheese, divided
1 cup grated Parmesan
cheese, divided 1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon ground black
pepper
2 cups ricotta cheese
2 cups cubed, cooked chicken
meat
2 (10 ounce) packages frozen
chopped spinach, thawed and
drained
1 tablespoon chopped fresh
parsley
1/4 cup grated Parmesan
cheese for topping
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain, and rinse with cold water.
2. Melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in the flour and salt, and simmer until bubbly. Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Season with the basil, oregano, and ground black pepper. Remove from heat, and set aside.
3. Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish. Layer with 1/3 of the noodles, the ricotta, and the chicken. Arrange 1/3 of the noodles over the chicken, and layer with 1/3 of the sauce mixture, spinach, and the remaining 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Arrange remaining noodles over cheese, and spread remaining sauce evenly over noodles. Sprinkle with parsley and 1/4 cup Parmesan cheese.
4. Bake 35 to 40 minutes in the preheated oven.

TUNA LASAGNA (Mediterranean)
3 Tbsp olive oil
1 medium onion, finely chopped
1 clove garlic, minced
1/2 can of chopped tomatoes
1/2 can of tomato paste
1/2 tsp sugar
1/2 tsp dried oregano
1 Tbsp fresh basil
1/2 tsp lemon juice
1 can of tuna (Albacore or other all white meat tuna), drained
8 3/4 oz lasagne sheets
8 oz mozzarella cheese, thinly sliced or grated
3 1/2 oz parmesan cheese, grated
2 3/4 oz butter
1 3/4 oz plain flour
25 fl oz milk
Salt and pepper
1. Pour the oil into the frying pan and heat. When the oil is hot add the onion and garlic and cook until the onion softens
2. Add the chopped tomato, tomato paste, sugar, oregano, basil and lemon juice. Season well with salt and pepper, mix together and simmer uncovered for 10 minutes.
3. Stir in the Tuna and remove the pan from the heat.
4. Preheat the oven to 350 degrees
5. Make the bechamel sauce.
Melt butter in the saucepan, then add the flour and stir in well. While stirring, slowly pour in the mil. season with salt and pepper. Let the sauce thicken by gradually bring it to the boil whilst continually stirring. Finally add the parmesan cheese, stir in and remove sauce from the heat.
6 Layer the lasagne. firstly spoon some tunasauce over the bottom of the casserole dish. Next, add a layer of lasagne and spread some bechamel sauce on top. Finally add a layer of mozzarella. Repeat this process until you've added all the ingredients. the last layer should be the bechamel sauce which will become crisp in the oven.
7 Bake for 35 minutes or until the bechamel sauce has turned golden brown.
Serve w/green salad and crusty bread

Seafood Lasagna
INGREDIENTS
1 (16 ounce) package lasagna noodles
1 pound cooked salad shrimp
1 pound fresh crab meat
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 cup grated Parmesan cheese
5 cups shredded mozzarella cheese
DIRECTIONS
Cook lasagna noodles in a large pot of boiling salted water until al dente. Drain well.
Preheat oven to 350 degrees F (175 degrees C).
In a medium size saucepan over medium heat melt butter or margarine, stir in flour and let flour brown slightly. Stir in milk, stirring constantly until sauce thickens. Add the parmesan cheese to the sauce and stir well.
In a 9x13 baking pan spread a thin layer of white sauce, followed by a layer of cooked lasagna noodles. Place 1/4 of the shrimp, 1/4 of the crabmeat and 1 cup mozzarella cheese on top of the lasagna noodles. Repeat three times, making four layers. Top the final layer with sauce and remaining mozzarella cheese. Bake for 45 minutes or until top is brown.

Mom’s Spinach Lasagna
1 lb. frozen chopped spinach, rinsed under cool water and squeezed dry
1/4 tsp nutmeg
1 tsp salt
½ tsp pepper
4 eggs
8 oz ricotta or creamy cottage cheese
1/4 c Romano cheese
1/4 c Parmesan cheese
4 c shredded mozzarella cheese or sliced whole milk mozzarella, reserve 1 cup
12 or 16 cooked lasagna noodles
2-28 oz jars marinara sauce
Mix thawed, drained spinach, nutmeg, salt, pepper, eggs, ricotta, Romano and Parmesan cheeses. Spoon ½ c sauce in bottom of baking dish. Make layers of pasta, spinach mix, mozzarella cheese and sauce, ending with sauce. Bake 45 minutes at 350 degrees. Sprinkle on additional mozzarella and let melt before serving.

For simple, but great, try this. Make it as you normally would, but mix a package of frozen chopped spinach and some basil into the ricotta or cottage cheese mixture. It's really good!

32 oz spaghetti sauce

Preheat oven to 350 degrees. Cook spaghetti. Cook ground beef. beat milk and eggs together, season with salt and pepper. put spaghetti in bottom of 9x13 pan. pour milk mixture evenly over spaghetti. pour spaghetti sauce over that. distribute hamburger evenly over mixture and sprinkly with seasonings and pepperoni. top with cheese. bake at 350 degrees for 30 minutes.

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are bad. Some of the fruit and vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
