There are so many different combinations that you can do, I lvoe doing what I call dump recipes, just taking different assorted items and putting them all into a pan. Good basic is fry up some diced onions with some ground beef, add cooked pasta like macaroni, stir in a can of tomatoes and tomato sauce, add a can of corn or what ever veggie you like, stir in shredded cheese. You can add whatever you want to this, like mushrooms, olives, peppers, sour cream, can substitute cream of mushroom soup, so many choices

Mexican rice:
2c uncooked rice.
Rince in hot water and drain a couple of times. Fry in vegetable oil for about 10-15 minutes until it's golden. Stir regularly.
Liquify in blender:
2 tomatoes (or use 1 can of tomatoes)
1/4 onion
4c water
(use less water if you are using canned tomatoes)
Add this to the rice and cook until the water evaporates. Keep stirring.
Goes really great with beans and milanesa:
Bread a very thin breakfast steak with eggs and bread crumbs.
Fry in small amount of oil.
Delicioso!

Here's one that's very easy and filling. Growing up, we called it "Aunt Anna's Dish" -- I have no idea why.

Cook your favorite pasta. When it's about halfway done, take a pound of ground beef and brown it. Strain it, then add a can of stewed tomatoes and about half a cup of chopped onion. You might consider buying a cheaper brand of stewed tomatoes, which will have more juice - otherwise you'll have to add some water. Adding a bay leaf while you're cooking the meat will help, as well as some salt & pepper. When the pasta is done, combine it with the meat and tomatoes. Mix well & serve.
