Hi. I need to prepare lunches for my work ahead of time and have begun freezing some. I want to turn one of my days off each month into "lunch-maker day"-- a day to prepare and freeze enough sandwiches for the coming month, plus a few extra perhaps. I have made bologna and honey mustard on cuban bread, turkey and cheese on sandwich bread, and turkey with spicy mustard on French bread, but I really, really love turkey and cheese with mayo. The question is, can I make this sandwich and freeze it safely and effectively? And, while I'm at it, will freezing work well for peanut butter and jelly and for peanut butter, honey, and cheese sandwiches? Thanks for any good responses!

What Can You Freeze?
You can freeze almost any food. Some exceptions are canned food or eggs in shells. However, once the food (such as a ham) is out of the can, you may freeze it.

Being able to freeze food and being pleased with the quality after defrosting are two different things. Some foods simply don't freeze well. Examples are mayonnaise, cream sauce and lettuce. Raw meat and poultry maintain their quality longer than their cooked counterparts because moisture is lost during cooking.

I pretty much noticed the same answers throughout the blog, so.. . . .. .I will not be freezing my mayo. The all time reason for the question is there was a sale that I couldn't resist. It was (1 gallon) of extra heavy Kraft Mayonaise for $2.99. I usually don't use Kraft mayo, and never extra heavy, unless making a salad that requires mayo, like creamy potatoe, macaroni, or cucumber. I just couldn't resist the fact that a gallon of decent brand Mayo was on sale that cheap. So I grabbed it. I ended up giving 1/2 of it away to my sister and the other half I will have only for a little while. My roommates eat mayo on everything, I figured it won't go bad before we use it all anyway.

I don't think you should freeze mayo, I would just put some mayo in a little Rubbermaid container or get some of the little packet ts. I am not very sure if the other sandwiches will do well in the freezer either.
