season w/ garlic, fresh, a little thyme, lemon pepper, and just a little soy sauce, put in dutch oven, cook for about an hour on 350*, make sure not pink in the middle when you're done, leftovers make great green chili

I would use a meat thermometer to gauge when the pork is done. Pork should be cooked to an internal temp. of 160 degrees fahrenheit. Set your oven for 350 degrees and check the meat after 1 hour. Take the meat out when it's about 5 to 10 degrees under the desired doneness to allow for carry-over cooking. Always let it rest for about 15 minutes, covered loosely with foil, then serve.

You'll want to sear the meat first. (To sear, heat a sautee pan with a bit of oil in it. Heat on Med-med high. Brown the tenderloin on all sides to lock in flavor and give it a nice color. You can salt it before searing, but don't put pepper on it because pepper burns at a high heat. Then, place it in a roasting pan, or whatever and pop it in a preheated oven at 375. The pork should be done in about 30 minutes. I like my pork medium rare, but you can cook it longer (40 minutes or so).

Pale pink is acceptably safe for pork these days. This is a really lean cut so don't overcook or it will be dry. You'd do yourself a great service to invest in a meat thermometer. Some come with recommended temperatures for doneness.

I would season it with lemon pepper and then place it in teh slow cooker for on med-high temp for about 6-8hrs, it will come out nice and moist
