they are still eatable I believe, but I prefer bananas still a bit grean. How can I cook them?

forget the banana bread already!

Cut them up- saute them with butter,a little sugar and some brown sugar- CAREFULLY add some rum when they are cooked- let the rum cook off- put it over ice cream

Make a couple of loaves of banana bread out of them, although I prefer my loaves to have at least 3 bananas each.
If you want to make a 3 banana loaf, you can put the other banana in the freezer until you have enough over ripe bananas for a loaf of banana bread. Bananas put in freezer will turn black but 1they are still ok to cook with.

Banana Bread
3 over-ripe bananas
2 eggs
1/2 cup oil
1/4 cup buttermilk
1 teaspoon vanilla

1 3/4 cup flour
1 1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup nut pieces(optional)

Mix last 5 ingredients and put aside.
Mix 1st 5 ingredients til blended. Slowly add dry ingredients, mixing well. Pour into a greased pan and bake at 350*F for approximately 1 hour.

Make this Banana Cake:
3 Bananas (Very Ripe)
4 oz butter
3/4cp Sugar
2 eggs
1 1/2 cps of Self Raising Flour
1 teaspoon Bi-carb Soda
1 tblespn Milk

Mix by hand, do not use a mix master or blender.
Cream butter and sugar, add eggs and mashed bananas.
Add the flour.
Add the bi-carb, which has been dissolved in the milk.
Add vanilla (about 1/2 teaspoon)

Cook in a loaf tin or small round tin, in moderate oven (180) for approx. 45mins.

Ingredients & Directions

1/4 c Soft margarine

1 c Sugar

2 Eggs

2 lg Bananas; mashed

1 ts Vanilla extract

1 3/4 c All-purpose flour

1 1/2 ts Baking powder

1 ts Baking soda

3/4 c Plain lowfat yogurt
Marble:

2 tb Sugar

4 ts Unsweetened cocoa powder;

4 ts Lowfat 2% milk

Recipe by: Rose Reisman Brings Home Light Cooking Preheat oven to 350 degrees; coat a 9-inch Bundt pan with nonstick cooking spray. In a large bowl or food processor, cream together margarine and sugar. Beat in eggs, bananas and vanilla extract until well mixed. Combine flour, baking powder and baking soda; add to banana mixture alternately with milk, mixing just until blended. Pour all but 1/2 cup of the batter into the cake pan. No Bake Banana Pudding
3 Bananas
2 Packs of vanilla or french vanilla jello pudding mix
Milk
Vanilla Wafer Cookies (the round ones)
Cool Whip (optional)

Sliced the bananas in round semi-thick pieces
Put one layer of cookies into a pan (foil pan is fine any shape)
Make one pack of the pudding
Add sliced bananas ontop of the cookies
Pour pudding on top (enough to cover the bananas)
Repeat these steps & Cool Whip on top & let it set in the fridge for a few hours
I consider it done once the cookies have a soggy texture.

1 1/2 Cups of flour
1/2 cup of sugar
1tsp of baking soda
1tsp of salt
1 stick of butter
1 egg
1 cup of mashed ripe bananas

I use 1/3 cup of milk and about a table spoon of vanilla but the recipe does not call for it.

Pre heat oven to 350 F

melt butter and mix with banana and Egg (also with milk and vanilla if you chose to use them) In a separate bowl mix together your dry ingredients. Combine together and bake for 45 minutes or until toothpick inserted in center comes out clean.

As a variation on this recipe you can put in Chocolate chips and any kind of nuts you like. You can also substitute a cup of apple sauce for the banana, milk, and vanilla. This makes a wonderful cake.

Makes: 16 servings

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1/4 cup (1/2 stick) butter or margarine, softened
1 cup mashed ripe banana (about 3 medium bananas)
2 eggs
2-1/4 cups flour
1-1/2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
1 cup chopped PLANTERS Walnuts

PREHEAT oven to 350°F. Beat cream cheese, sugar and butter in large bowl with electric mixer on medium speed until well blended. Add banana and eggs; mix well.
ADD combined dry ingredients; mix until moistened. Stir in walnuts. Pour into greased and floured 9x5-inch loaf pan.
BAKE 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely on wire rack. Cut into 16 slices to serve. Store leftover bread in refrigerator.

Make Banana Bread!! Yum. If you don't want to do it immediately, put the overripe bananas in the freezer. Thaw them out when you want to! YUM!

I love to add overripe bananas to pancakes. Chop them up and throw in the batter.
