The Hong Kong Airport is consistenly ranked as the best airport in the world, and is the largest passenger terminal in the world.
You won't get bored, plenty of shopping from electronics, to music, clothing, lots of designer clothing, gifts and "stuff," very good restaurants on the level above the departure area and plenty of decent bars. There is also a free underground train that can take you from one end of the terminal to the other, or you can walk. There are also internet cafes, too. If you manage your time well, there is also an express train that will take you into the
central district of Hong Kong with just two stops, you won't have much time, but it can be done in the time you have. Go to www.hkairport.com and you can get all the info you need. Have a good trip!

D greendesk: They certainly are not ruder than in the U.S. I've actually found them very friendly. On the other hand in the U.S. they are downright abusive.
As for HK Intl.... - it's the best in the world. If you have time, take the airport express train (20 minutes) to Central). Have fun. If you don't want to leave the airport, you won't be bored because it's basically a shopping mall with airplanes. Very nice... granite and marble floors everywhere!

7 hours is enough for you not to stay at the airport.
It only take about 30 minutes to get from the airport into the heart of town for what ever you want to do. Shopping, dining, and may be a quick trip to the Victoria peak if it's during the day.
The airport itself is very big. Although it does offer some variety of things but they are typically not the best in quality or value.
See the official link to see for yourself.

Depending on your nationality, I donot know if you need a visa. Yes, you can enjoy Hongkong for 10 hours. Since your time is limited, you can take a half day city tour. It could be a waste of time if you go on your own, meaning taking the bus or taxi to any place of interest. You can ask help from the Hongkong Tourism Board. They do their job very well.

Just got back from HK this morning, there are loads of shops to wander around, one thing to remember. it is very very busy and going through customs/passport control can take ages, make sure you give it plenty of time as on my way out I missed the connection due to so many people trying to get to their connecting flights.

Whatever it is, be mindful of the rude security check-point staffs during transit and do not leave items behind on the plane or it might get stolen, be careful, it happen to me, once.
