stick with hearty veggies and dishes.. finish with a raspberry filled chocolate cake! yum!

I'm partial to French fries, which are baked in the oven.

Preheat the oven to 450 to 500 F.
Cut some russet potatoes (or any starchy potato) into 1/4 inch wide sticks. Pat them dry to soak up most of their moisture. Then toss the potato sticks with approximately a tablespoon olive oil (not much will be needed) to just coat the potatoes. Sprinkle with Kosher salt and some paprika or freshly ground pepper. Spread them out on a cookie sheet leaving some space between the potatoes. Baked for 15-20 minutes, then turn the potato sticks and bake for another 10 minutes or so until the sticks turn lightly brown/golden. Serve immediately.

Carrots steamed in their own juice are good too. Get a medium sized heavy sauce pan. Melt a table spoon of butter in it. Slice about a pound of carrots into 1/4 inch slices. When the butter has melted (do not brown butter) add the carrots and toss them until they are coated with the butter. Put on a tight fitting lid and turn the flame down to low. Leave the carrots alone for about 10 or 15 minutes and then shake the sauce pan without lifting off the lid. And let the carrot continue to cook for another 5-10 minutes. Test them after that to see if they are done. The carrots should be soft without being mushy. The juice from the carrots will provide enough moisture to steam the carrots. These are excellent, and yet so easy to make.

Some good sides are 1. Green Beans / Corn 2. Possibly a Roll or Garlic Bread And maybe for desert find out what they like the best or make it a surprise.

BROCCOLI & NOODLES SUPREME
3 cups uncooked medium egg noodles
2 cups broccoli flowerets
1 can (10 3/4 oz) Campbell's Condensed Cream of Chicken Soup
1/2 cup sour cream
1/3 cup grated Parmesan cheese
1/8 teaspoon ground black pepper

1. Prepare the noodles according to the pkg. directions in a 4 quart saucepot. Add the broccoli during the last 5 minutes of the cooking time. drain the noodles and broccoli well in a colander and return them to the saucepot.
2. Stir the soup, sour cream, cheese and black pepper into the noodles and broccoli. Cook and stir over medium heat until hot.
3. Top with additional cheese before serving.
makes 5 servings

I think maybe you're from USA, so this may not make much sense to you, but I would make a salad with thinly sliced fennel, dressed with olive oil and lemon juice, black pepper and parmesan shavings over.

Alternatively, field mushrooms baked in the oven filled with a creamy blue cheese like dolcelatte, mashed and mixed with a crushed clove of garlic and some black pepper.

too late now I'm hungry. how about a baked potato, or homemade macaroni and cheese, rice, french fries, corn on cob, salad, potato salad or macaroni salad. Hmmmmmm. looks like I will be grilling some steaks on the grill tonight no matter how cold it is. Thanks for asking the question and making me hungry. I believe for my family tonight it's steaks with fries, salad on side, and rice. yum yum.

A baked potato is the obvious. However, grilled garden veggies are also great and less calories. Try grilling an onion! Very good. Also, sauteed mushrooms and onions.
