First of all, don't forget the extinguish the drink before you actually imbibe it. Believe it or not, some people forget and get burns.
Second, there are a few drinks that can be ignited prior to drinking. Not just flaming Dr. Pepper, but also Sambuca Romana (with coffee beans being roasted right in there, for flavor). There is more than one drink.

It's probably sambuca if it is just one liquor. If it is a mixed shot, probably a flaming Dr. Pepper: Half a glass of beer, 1 shot of Amaretto, and Everclear or 151 floated on top of the shot. You light the Everclear and then drop the shot into the beer. Then drink.

Sambuca is specifically made to be a flaming shot. People use other liquers as well. Oh and a flaming doctor pepper, which i saw in some of the other answers is a mix drink using hot shot(cinnamon schnapps and dc. pepper.)

There are a couple that I have had that we light on fire before drinking. One is the Flaming Dr. Pepper and the other is Rumplemints. With Rumplemints, you light it and then place your hand over the glass, inhale the fumes and then down the shot. Makes your mouth very minty too..lol

Ive seen somebody do a few shots of flaming 151. It was rather interesting to see his whole face start on fire. It was a nice blue colored flame. Luckily he only had a mild 2nd degree burn.

There are several my favorites are the lemon drop which has a flaming lemon on top that is soaked in 151 and sugar. Or a backdraft you light put your hand on top the flame goes out and when you remove your hand poof it flames up. Try going to http://www.drinksmixer.com/cat/22/ for some ideas.

there are several different shots that can be lite.....anything over 150 proof burns nicely, bars will do this to make it seem fancier or neater to the consumer, it is a way to charge more for the drinks
