I need a method that isn't overly complicated and fairly low overall in fat/calories. Some items that I have on hand and am trying to use up: sweet potatoes, onions, cream of mush and cream of chick soup, lipton onion soup mix, carrots, quinoa, millet, polenta, raisins. THANKS!

If the breasts are not brined already, brine them. To brine, add some poultry seasoning and honey (optional) to a brine solution. The solution should be about 1/2 to 3/4 cup of salt per gallon of water. Non-iodized salt would be best. Have enough brine to completely cover the turkey. Let turkey sit in brine for about 3 hours in the fridge.

Coat the bottom of a roasting pan with light olive oil. Cover bottom of pan with chunked up onions and carrots. Season as desired, possibly add the onion soup mix with about 1/3 the normal amount of water. Brush the breasts with a little light olive oil.

Cook turkey for normal amount of time at normal temp, but have covered with lid or foil for about 2/3 of the time.

Bake the sweet potatoes on the side.

You can serve up the carrots and onions as a veg if you want. You can use the pan drippings/onion soup as a sauce/gravy. You might want some other less starchy veggie as a side, either a salad or something else you prefer.

Best way we've found for these is in a slow cooker, with chicken broth for moisture, as turkey breast will tend to be very dry with most other methods. We have even put dressing in a foil wrap and bake with the breast.

i would put onion's, cream of mushroom, cream of chicken, onion soup mix ,carrot's and 2 cups of milk in sauce pan heat heat and stir put turkey in lightly greased baking dish pour the sauce over dish bake on 350 1 hour or until bubbly ****peal and slice sweet potatos put in a greased baking dish add raisins , brown sugar, marsh mello's cover put next to turkey in oven

I like to wrap the turkey in bacon, (use turkey bacon for low fat). Put it in a crock pot with potatoes and carrots and let it go. I use this recipe for wild turkey and it rocks. (season to taste with salt and pepper of other spices as desired).
