Chinese food is usually high in carbohydrates which are metabolized quickly. It's the same effect as eating a large bag of potato chips. It will satisfy your hunger only briefly, then you'll be hungry again.

You are mostly bulked out with rice and other starchy ingredients. These are slow to digest but hunger starts to kick in an hour or so later.
MSG and salt can also cause hunger, side effect of dehydration. And any other beers or wine you drink will give you a second wind and make you feel hungry late into the evening.

Chinese food contains spices and other stuff that makes it really good. There is one ingredient called ajinamoto which has an effect. It might be a factor as well for feeling hungry afterwards... But overall i reckon its the ingredients...

I think it has to do with all the vegetables in there. The veggies fill you up quickly but then they help the digestion move along a little faster then most foods. So you feel hungry faster.

You don't eat enough rice, we westeners want the meals to taste similar to our own type of food and have roughly half and half rice and sauce. Chinese on the other hand eat loads of rice with only a small amount of sauce so they fill their stomachs with the rice and can go for hours working it off.
I like a large bowl of boiled rice with just a splash of curry sauce stirred into it. filling and nourishing......................

I've always wanted to know this too. It fills me up real quick for a short while and then soon after i feel like i haven't eaten all day. good question!!! sorry i can't answer it though.
